Carrot Thuvayal / Carrot Chutney

Some dishes are so quick and so tasty that you want to include them in the meals every week. This quick and yummy chutney belongs to the above category!! This is ready in less than 15 minutes and tastes so good with idli, dosa, roti, plain rice or curd rice. Adjust the amount of salt and chili as per preference. I am including this for this BM under cooking carrots in many ways.. I got this recipe from here and it is surely a keeper

Ingredients
Carrot - 1 cup, grated
Tamarind - Small lime size
Ulutham Parupu / Urad dal - 1 table spoon
Mustard seeds - 1/2 teaspoon
Red Chili - 6 + 1
Curry leaves - 10
Oil - 2 teaspoons
Salt - 1/2 tea spoon
Asafetida - 1/8 tea spoon


Method

Grate the carrots after peeling their skin and set aside
Soak the tamarind in warm water for 10 minutes
Heat oil and roast the ulutham parupu and red chili. Once they are golden, add the grated carrots. Sauté them well till the raw smell of carrot is gone.
Remove from heat and allow it to cool completely and grind them to a coarse paste and add salt and the soaked tamarind with water. Grind again to a smooth paste. If required, you can add water for grinding. Add water slowly
Heat oil in a small pan and add mustard seeds and when they seeds splutter, add curry leaves, a red chili and asafetida.
Add the tempering to the chutney and serve!!!
