Toffai (Tofu Dosai)

Toffai is a type of dosai made with Tofu.  I was looking for a stylish name for the recipe and this name (suggested by my dad) is what I liked from the suggestions received..

Kind of cool….Think about calcium rich food and first thing that comes to people’s mind is milk and its products, but many may not recognize that Tofu is also very rich in Calcium.  I got this recipe from here and modified it a bit. This dish can be made to vegan by substituting soy milk for milk. A very nice breakfast recipe.

Oats Dates Almonds Shake

Tell calcium rich food and everybody will say Milk… Milk and its products are very rich in calcium. Oats is another calcium rich product. Almond is another calcium rich product. Some also say that dates are good source of calcium.. How about a dish with all these added?
That makes the dish calcium rich. This shake is a super hit in my house. Anybody I have shared this recipe with has appreciated and even better, they do it in their kitchen. It will be very filling and is a perfect breakfast. You can make this day ahead and serve chilled. So you have the morning breakfast waiting for you even before you go to bed.. How cool is that? If preferred you could not use honey and add more dates if more sweetness is required. Dry roasting the nuts is optional but it brings a lot of flavor. Paruppu Payasam

Payasam is a very authentic, simple and delicious desert. It is very tasty and authentic. It graces many traditional weddings and festivals. Payasam is milk, sweetener like sugar or jaggery, a protein or a starch base. This payasam is made with lentils and dals.

Sesame Brinjal

How about a simple dish that is very aromatic and tasty. I like brinjal and this dish is so good with the addition of sesame seeds. I actually thought of naming it as seeds brinjal as all that you see in the dish is seeds!! Seeds of the brinjal and the sesame seeds kinda look similar in the picture. Not many folks like this nutritive vegetable, but this dish can impress those too as it is not mushy, has a very nice aroma of sesame seeds and coriander powder. Brinjal is very nutritious vegetable and available in many countries and in many sizes. I took the regular small to medium sized purple brinjal for this dish. This dish can be done in less than 20 minutes. This goes very well with sambar rice, rasam rice or chapathi. I got this recipe from here.

Onion Sweet, Hot and Sour Chutney

What is a complex taste – you have many dimensions to it. This chutney is all about about multi dimensional taste. It is sweet, sour and hot. It goes very well with chapathi. curd rice, idli or dosa. I got this recipe from here.

Ingredients
Onion - 2 (thinly sliced)
Garlic - 1 table spoon(chopped)
Ginger - 2 tea spoons (grated)
Salt - 3/4 tea spoon
Tamarind - A small lemon size
Jaggery Powder - 1 table spoon
Red Chili Powder - 1 table spoon
Turmeric Powder - 1/2 tea spoon
Oil - 3 table spoons (preferably Gingelly Oil)
Mustard Seeds - 1/2 tea spoon
Asafetida - 1/8 tea spoon
Curry Leaves - 5
Coriander Leaves - To Garnish

Method
Soak tamarind in 1 cup of warm water for 15 minutes and extract thick pulp and set aside
Heat oil in a pan and add mustard seeds. Once the mustard seeds crackle, add the onions, ginger, garlic, curry leaves and salt. Cook until the onions turn golden
Add the tamarind juice, red chili powder, turmeric, asafetida and allow it to cook for around 10 minutes until the raw smell of tamarind goes away and oil floats on top. Add jaggery and cook until the jaggery melts. Garnish with coriander leaves.
Serve hot!
