Besan Dhokla / Kadalai Maavu Dhokla

Besan Dhokla is a simple recipe and it tastes best when served with green chutney or tamarind chutney. It has the same concept like Idli but made with besan instead of ulutham parupu and parboiled rice.  A very healthy breakfast or perfect evening snack or tiffin.

Ingredients
Kadalai maavu / Besan – 1 cup
Rice Flour – 1 Table spoon
Eno Fruit Salt – 1 tea spoon
Sour Curd – 1 Cup
Salt – 1 tea spoon
Curry Leaves - 10
Coriander Leaves – 1 table spoon
Ginger – 1 tea spoon
Green Chili 2+2 (adjust to taste)
Mustard Seeds – ½ tea spoon
Oil – 1 tea spoon
Asafetida – ¼ tea spoon
Lemon Juice – 2 table spoon
Method
Mix the kadalai maavu, rice flour, salt, asafetida well
Add curd to this mixture and mix it well to ensure that there are no lumps
It should be in thick idli maavu consistency – so add little water also
Keep aside for 4 hours covered
After 4 hours, add grated ginger, 2 green chili finely chopped, curry leaves, coriander leaves and lemon juice
Heat a big pan which can take the cake pan like a cooker vessel in cooker
Keep a small plate in the big pan and add water till the plate and not over it
Grease the cake pan with oil
Now add fruit salt and mix well
Immediately pour the batter into the cake pan and steam cook for 12 minutes
After 12 minutes, put a tooth pick inside. If the toothpick comes out clean, then it is ready
Remove from heat and allow it to cool for 5-6 minutes
Keep a plate on top of the cake pan and invert it upside down
This will transfer the dhokla to the plate
Heat 1 spoon oil in a pan. Once it is hot, add mustard seeds and green chili sliced
Garnish the dhokla with this and spread well
Cut the Dhokla into desired shape and it is ready to be served!
