Breakfast is a very important meal of the day - yes everybody know that!! And typically we do not have a lot of time to prepare for breakfast... Most of the South Indian breakfast recipes are quick like idli, dosa, upuma. This muffin is also a quick one and it tastes so much better when served hot. These are also good when reheated. This can be made in less than 25 - 30 minutes including preparation and are great for kid's lunchbox also!! I got this recipe from here and made very few changes (very very few). I am a person who prefers to eat savory muffins vs. a sweet one and I loved this!!!
Ingredients
All Purpose Flour - 1 cup
Garlic - 6 cloves(minced fine)
Italian Seasoning - 2 table spoons
Chili Flakes - 2 tea spoons
Butter - 2 table spoon
Baking powder - 1/2 table spoon
Salt - 1/2 tea spoon
Milk 1/2 cup
Egg Replacer - 1 tea spoon
Warm Water - 2 table spoons
Mozzarella Cheese - 1/2 cup(shredded)
Coriander Leaves - 1/4 cup (chopped fine)
Method
Preheat the oven to 190 degrees C
Grease the muffin tray and set aside
Mix together warm water and egg replacer and beat it well and set aside
Mix all the dry ingredients (flour, salt, baking powder, Italian seasoning and chili flakes) well
Add butter, coriander leaves, egg replacer mixture and cheese and mix well until all are well incorporated
Now add milk slowly and make it to a muffin batter consistency. Add a table spoon or more milk if needed
Fill the muffin molds to 2/3 full and bake it in the preheated oven for around 20 minutes until the top is little golden
Remove from oven and allow it to cool directly in the cooling rack for 5 minutes and enjoy!!!

I know this is way late into your post, but, I read the original recipe as well and I love your take on it. However, since I don't have egg replacer and I do not have problems with eggs whatsoever, I was wondering if I could change the replacer for well, actually 1 egg. I'll try that with your twist and I hope they turn out fine!
