Pav - Homemade Pav

Pav is a delicious bread that is served warm with generous butter. It is accompanied by Bhaji for Pav Bhaji, by Misal for Misal Pav, by vada for Vada Pav, by patty and onion slices and tomato slices for a burger.  I am sharing this for BM #24.

Ingredients
All Purpose Flour - 2 1/4 cups + little more for dusting
Oil - 3 table spoons
Salt - 1/2 tea spoon
Sugar - 2 table spoons
Luke Warm Water - 1 cup
Instant Yeast - 1 packet (2 1/4 tea spoons)
Milk
Butter - for brushing on top

Method
Heat water in the microwave to about 120 degrees F. Add sugar and yeast and mix well and set aside covered to bubble up
Sieve together flour and salt and transfer to a mixing bowl
Once the yeast has foamed and become bubbly, add the yeast water and oil to the dry mixture and run the mixture on low until all well combined
Run the mixer on medium for around 8 to 12 minutes until it becomes a smooth and silky tout ball
Grease a big bowl (big enough to take about 3 to 4 times the dough) with oil spray and add the dough into and keep it covered until double to thrice in volume
Grease and flour a 9 inch cake pan and set aside
Take little flour in hand and make smalls out of the dough. It will be sticky, so the extra flour should help
Arrange the balls on the cake pan leaving gap between the rolls. Make sure that there is little space only and not too much space as if there is lot of room to spread, then it will not rise up, but rise horizontally. So make sure that you arrange them closer with only little room.
Cover it and allow it to rise for around 30 - 40 minutes until it has risen well
Preheat the oven to 200 degrees C
Brush the pav with milk and bake it in the preheated the oven for 30 - 35 minutes until it is golden on top. Mine took around 34 minutes.
Brush with butter and allow it to cool in the pan for 5 minutes and transfer to a cooling rack to cool completely before slicing. If enjoying as a full piece, then you can enjoy it warm.
