Rabri is a very famous milk sweet which is made by reducing the milk. Normally rabri takes a very long time to make… This one is a quick version and I am using Evaporated milk which has the water content removed by around 60%. I got this recipe from here and made very few changes..I served the rabri with ghevar.
Ingredients
Unsweetened Evaporated Milk - 1 can
Ricotta Cheese - 1 15 oz..
Sugar - 1/2 cup
Nuts - 1/4 cup
Cardamom Powder - 1/4 tea spoon
Saffron - A few strands
Nutmeg - A few grating
Edible Camphor - A very small pinch
Ghee - 1 table spoon
Method
Heat ghee in a pan and slowly cook the ricotta cheese until it looks like khoya 15 - 20 minutes. Should be little moist..
Add evaporated milk very slowly and keep mixing.. Add only a table spoon at a time to ensure that there are no lumps. Once you have added about 1/2 cup of evaporated milk, you can add 1/4 cup at a time and mix well.
Cook on low medium heat for around 5 to 8 minutes until it becomes thick and creamy. I switched it off at this stage and continued after 15 minutes and it became little thicker than when I switched it off..
Add the nuts, saffron and Cook on simmer for 5 minutes..
Add sugar finally and and cardamom and mix it well and simmer for 5 minutes more...remove from heat and serve warm or serve chilled.
If the rabri becomes thicker, then add little milk to bring it back to desired consistency. Ricotta Cheese has a tendency to thicken...

Points to Note
Always cook on low heat or low medium heat only.
Add little milk if needed while serving as ricotta cheese has a tendency to thicken
Adjust the sugar as per needs
Edible camphor and Nutmeg are optional
If you can lay your hands on unsweetened khoya, then you could omit the part of cooking the ricotta cheese and start from the evaporated milk addition step on
