Whole Wheat Honey Buttermilk Bread

Bread is an universal food, although it is more used in the Western Countries, bread has become an important food in most diets. Bread is normally made with All purpose flour or bread flour or Maida and this one is a much healthier one. I got this recipe from here. I chose this recipe for BM #25 under Baking with whole grain, the choice of grain today is Wheat.

Ingredients
Whole Wheat Flour – 3 cups
Baking Soda – ½ tea spoon
Instant Yeast – 2 tea spoons
Oil – 3 table spoons
Curd – ½ cup
Water – ½ cup + 3 table spoons
Salt – 1 ½ tea spoons
Honey / Molasses – 3 table spoon
To brush on top before baking
Milk – 2 tea spoon
Oil – 2 tea spoon

Method
Heat water in the microwave for a minute. Ensure that the temperature is between 110 – 120 degrees F. Add honey and mix well. Now add the yeast and mix the yeast thoroughly and set aside for 10 minutes. If the yeast is good, it will foam up.
Sieve together flour, salt and baking soda well
Once the yeast is foamed, add oil and curd to it and beat it well
Make a well in the center of the dry ingredients and add the wet ingredients to the dry ingredients. Add a table spoon or 2 of water if the dough is too dry
Preheat the oven to minimum temperature and switch it off when it reaches the temperature. This is to provide a warm place for the dough to rise.
Knead it for around 10 minutes. I used the mixer and let it run for 8 minutes on medium speed.
Oil a bowl and make a ball of the dough and transfer to the oiled bowl. Cover it with plastic and keep it in the warm, but switched off oven for an hour to 2 hours. The longer the better. I kept for 2 hours.
Remove the dough from the oven and form it to a loaf shape and keep it in a greased loaf pan, covered loosely with plastic wrap and allow it to rise for another 40 minutes (until doubled) and risen over the rim of the loaf pan
Remove the loaf from the oven and preheat the oven to 350 degrees F on convection mode (regular mode is 375 degrees F)
Mix milk and oil for the topping and gently brush the milk and oil mixture on the top of the bread. This will help great crust and golden color.
Bake the bread for 20 minutes. Reduce the temperature to 330 degrees F on convection mode (regular mode is 350 degrees F) and bake for another 15 minutes. Mine took exactly 15 minutes. We are looking for a good golden brown crust, internal temperature of the bread should be 200 degrees F and a hollow sound when tapped
Bring it to a wire rack and allow it to cool in the pan for 15 minutes. Transfer from the pan to the wire rack directly and allow it to cool completely before slicing.
Always cut only slices that are needed as the uncut bread has a longer shelf life than the sliced bread.
