Veg Hakka Noodles

A very delicious and spicy noodles. Noodles and fried rice and so dear to kids and teens. They are also very popular among adults and Indo Chinese food is the next popular food on the menu after the Indian food in restaurants. Before pizza and burgers came to fame in India, it was the Chinese food that became part of the restaurant menu.  I do not know if in China there is anything like this, but in India, Indo Chinese noodles, rice are very popular. Adjust the spice according to taste.

Ingredients
Hakka Noodles - 100 grams / about 3 cups
Capsicum - 1/2
Carrot - 1
Onion - 2 medium
Garlic - 10 cloves
Ginger - 1/2 tea spoon (grated)
Red Chili Sauce - 1 tea spoon
Sweet Chili Sauce - 1 tea spoon
Soya Sauce - 1 table spoon
Salt - 1/2 tea spoon + 1/3 tea spoon
Green Peas - 1/4 cup
Cashew / Peanuts - 2 table spoons
Sesame Seeds - 1 table spoon
Oil - 1/4 cup + 1 tea spoon
Brown Sugar - 1 table spoons
Spring Onions - 1
Vinegar - 1 table spoon
Fennel Seeds - 1/2 tea spoon

Method
Thinly slice the onions, carrot and capsicum.
Chop the spring onions finely and keep the white onion part and the leaf part separately.
Finely chop the garlic
Roast the sesame seeds in microwave for a minute and half and set aside
Heat water in a pan and once it comes to a boil, add the noodles, 1/2 tea spoon salt and allow it to cook until the noodles are well done.
Strain them and spread them on a plate. Apply a tea spoon of oil and allow them to cool. They should not stick.
Heat 1/4 cup oil in a wok or a big pan. Add fennel seeds, and cashew and sauté for 10 seconds.
Now add the garlic and allow it to cook until it starts color lightly
Now add the onions and 1/3 tea spoon salt and allow it to cook until the onions are translucent
Add the spring onions onion part, capsicum, carrots and peas and cook for a minute
Add the red chili sauce, sweet chili sauce and soya sauce and cook for a minute
Add brown sugar and vinegar
Now add the cooked and drained noodles and mix well
Garnish with spring onions green leaves part and sesame seeds and serve hot!!!
