3 Parupu Kootu (3 பருப்பு கூட்டு)

3 parupu kootu is a very tasty kootu that is made with three types of parupu (dals). This recipe is for pumpkin kootu, but chow chow, cabbage can also be made like this. This is very healthy and rich in protein. This is pretty easy to do. Adjust chili and salt to taste. This is another homey food that I do quite often but never got a chance to take a picture..

Ingredients
Toor Dal / Tuvaram Parupu – ¼ cup
Channa Dal / Kadalai Parupu – ¼ cup
Urad Dal / Ulutham Parupu – 1 table spoon
Pumpkin (chopped in to 1 inch length and 1 cm width) – 4 cups
Mustard Seeds – ½ tea spoon
Cumin Seeds – ½ tea spoon
Red chili – 4 + 2
Coriander Seeds – 1 tea spoon
Oil – 1 table spoon + 1 tea spoon
Salt – 1 ½ tea spoon
Coconut (shredded) – 1 cup
Turmeric Powder – ½ tea spoon
Asafetida – ¼ tea spoon
Curry Leaves – 6
Coriander Leaves – 1 table spoon
Water – to boil the pumpkin
Method
Add water to the pumpkin along with asafetida, turmeric powder and salt and boil the pumpkin and keep aside. Make sure that it has its shape and not too soft
Heat a small pan, add a tea spoon oil
Add Bengal gram and once the Bengal gram turns color lightly, add coriander seeds and cumin seeds and after 15 seconds, add 4 red chilies and remove all from heat and set aside to cool once well sauté.
Once in room temperature, grind this mixture with coconut
Add 2 table spoons water while grinding. Keep this aside
Boil the tuvaram parupu with a pinch of turmeric and mash it
Once well boiled and mashed, keep the tuvaram parupu aside
Heat a big pan, add a table spoon oil
Once the oil is hot, add mustard seeds, and once mustard seeds crackle, add ulutham parupu
After ulutham parupu turns golden in color, add red chili and curry leaves and sauté for around 30 seconds
Add the boiled pumpkin (along with water), mashed tuvaram parupu and grinded mixture in this order in a gap for 1 minute
Add coriander leaves and remove from heat and now this delicious kootu is ready to be served!!
