Cucumber Raitha / Cucumber Pachadi

A very tasty and refreshing dish which is best when served chill. This is very simple and quick to make and can be done in less than 10 minutes. This is a accompaniment for Biriyani, Pulao, Sambar rice or any spicy dish. Make sure that the curd is not sour and is fresh. This is the first dish, somebody asked me a recipe for.

Ingredients
Cucumber – 2
Curd – 3 cups
Grated Coconut – ¼ cup
Water – as needed
Cilantro – 1 table spoon
Curry Leaves – 5
Mustard Seeds – ½ tea spoon
Cumin Seeds – 1/8 tea spoon
Red Chili – 2
Green Chili – 2
Salt – ¾ tea spoon
Asafetida – ¼ tea spoon
Oil – 1 tea spoon

Method
Grate cucumber and keep it separate
Slit cut the green chili
In the serving bowl, add curd, asafetida, salt, coriander leaves, coconut and the grated cucumber
Heat a small pan and add oil and once hot, add mustard seeds and cumin seeds
Once they crackle, add the red chili, green chili and curry leaves
After 15 seconds, remove from heat and add it to the raitha
Mix well and it can be served as is also if the curd was chill. Else refrigerate and serve.
