A tasty, quick recipe. My house was so aromatic from the cloves and it was so festive.. This recipe will give around 70 cookies. A perfect cookie to be on parties.. I got this recipe from here and made some changes..
Ingredients
All Purpose Flour – 2 cups
Butter (softened) – ¼ cup
Salt – A pinch
Sugar – 1 cup
Lemon Juice – 2 tea spoons
Flax Seed Powder – 1 table spoon
Water – 3 table spoons
Clove Powder – 1 tea spoon
Lemon Zest – of 1 lemon
Baking Soda – 1 tea spoon
Method
Mix flax seed powder and water and set aside
Cream the butter and sugar in a medium sized bowl until pale and fluffy. Sieve together flour, clove powder, salt and baking soda. Beat the flax seed mixture well until it becomes gooey.
Add the wet ingredients to the dry ingredients and mix until well combined
Knead for a few minutes and make it into a 2 inch diameter log and wrap it in parchment paper or wax paper and keep it in the fridge for at least an hour. Keep the log inside the parchment paper and keep it in the paper towel roll cardboard. This helps to retain the circular shape.
Preheat the oven to 325 degrees on convection mode (regular mode is 350 degrees F).
Remove the dough from the refrigerator and cut into ¼ inch thick slices and arrange it on a baking tray lined with parchment paper. Give gap as this will expand
Bake it for 12 – 15 minutes until the sides start to turn golden. Mine took 15 minutes.
Allow to cool on wire rack and enjoy the melt-in-your-mouth cookies
