Paavaikkai Varuval (பாவைக்காய் வறுவல்)

Paavaikkai Varuval is like paavaikkai chips but needs to be served within a couple of hours of preparation or it can get soggy. This is a very crispy and crunchy dish and has a little bit of the bitterness from the paavaikkai. 6 bitter gourd may sound like a lot, but it will shrink and become very small in quantity. The recipe brings the nutrients that come with bitter gourd and is not very bitter and is palatable.

Ingredients
Paavaikkai (Bitter gourd) – 6
Channa Flour / Besan – 2 table spoons
Salt  5 tea spoon
Oil – 5 table spoons
Turmeric Powder – ¼ tea spoon
Asafetida – A pinch
Rice Flour – 2 tea spoons
Red chili Powder – ½ tea spoon

Method
Cut the paavaikkai into small and thin pieces after removing the seeds
Boil this paavaikkai for around 15 minutes in Microwave with salt
Drain the excess water and also squeeze the paavaikkai to get the moisture out and keep aside
Make a mixture of Channa Flour, rice flour, red chili powder, salt and asafetida
Add this mixture to the boiled paavaikkai
Mix this well – Do not add water
Heat the frying pan and add oil
Once the oil is hot, put little paavaikkai in it like frying pakoras
Remove the paavaikkai from oil once golden brown and serve!
