Eggless Jam Swirled Muffins / Eggless Nutella Swirled Muffins

Want a breakfast or food on the go in a jiffy? I am sure a lot of us say yes.. These muffins are so perfect for it. A delicious and very pretty looking muffins was suggested by Priya for this month's Eggless Baking Group which is started by Gayathri. It was a quick and easy one and you get a lot of points for those swirls. Wanted to get the picture with the muffin opened (like the interior), but it was gone by then!!! The original recipe had eggs and I replaced them with Egg replacer and little extra baking soda

Castor Sugar - 2/3 cup
All Purpose Flour - 1 cup
Whole Wheat Flour - 1 cup
Baking Powder - 2 tea spoons
Baking Soda - 1/2 tea spoon
Salt - 1/4 tea spoon
Curd - 3/4 cup
Egg Replacer - 1 table spoon
Warm Water - 1/4 cup
Vanilla Extract - 2 tea spoons
Unsalted Butter - 1/2 cup
Jam of Choice / Nutella - 2/3 cup (I used 1/3 cup Nutella and 1/3 cup Jam)

Method
Melt the butter and allow it to cool
Sieve together all purpose flour, baking powder, baking soda and set aside. Add whole wheat flour and salt to it.
Beat the egg replacer with warm water until it becomes fluffy. Now add the butter and sugar and beat it until smooth and creamy.
Add vanilla and curd and beat it well and set aside
IMG_9194Preheat the oven to 200 degrees C
Grease the 12 cup muffin pan and set aside
Pour the liquid contents over the dry ingredients and mix them. Do not over mix as that can make the muffins hard
Add the jam and whisk lightly to get the marbled effect

Scoop the batter into the greased muffin pans and bake it in the preheated oven for 18 - 20 minutes or until a toothpick inserted comes out clean. Mine took 18 minutes.
Transfer to a cooling rack and allow it to cool for 5 minutes
Remove from the muffin pan and let them cool completely on a wire rack
Enjoy the delicious and pretty looking muffins

Points to note -
Original recipe had only all purpose flour. I added whole wheat flour to make it little healthier. You could do all with all purpose flour
The muffins were very soft, moist and I should say melt in the mouth
You would get 12 regular sized muffins from this.
We liked the Nutella swirled muffins more than the Jam swirled ones as the jam was too sweet for us.
