Cilantro Lime Rice–Chipotle Style–Mexican Cuisine

When I went to US, most of the International food were breads in some form - burger, pizza, rolls, sandwich.. Of course there were Asian cuisines which were an exception.. There was also one more cuisine which had rice and I was excited to see rice being used.. When we went to the Mexican restaurant - Chipotle, we were invited with this very refreshing and very flavorful Cilantro Lime Rice.. Cilantro is coriander... I got this recipe from here and it was a delicious one..

Ingredients
Basmati Rice (Any long grain rice) - 1 cup
Butter - 1 tea spoon
Lime - 2
Sugar - 1/2 tea spoon
Coriander Leaves - 1/4 cup (finely chopped)
Salt - 1 tea spoon (adjust to taste)
Method
Soak the rice after rinsing for 15 minutes
Heat butter in a pan and add the rice and sauté for a minute or so until the butter is well coated in the rice
Add 2 cups of water, sugar and salt and cook for around 12 - 14 minutes on medium low heat. (Cover it). You need to stir it once when it comes to a boil and once around 8 minute time..
After 14 minutes, all the water would have absorbed, now add the lime juice (one lime first and add the second one if needed) and coriander leaves. Remove it from heat. After a few minutes fluff the rice with the help of a fork!!
Serve!!!

  7. The rice looks simpole & flavourful. Adding some turmeric powder will make it chitranna which is very famous rice dish in karnataka.

  19. If you get a chance to go back to the US try visiting the Northwest! Seattle and Porltand specifically. Our seafood is very light and we cook with a lot of vegetables and spices. Portland In particular has many organic, whole, paleo, vegan, etc style foods that you may enjoy if you're not a fan of pizza, burgers, pastas, etc (neither am I but I'm an Oregonian through and through)! Glad you liked chipotle's rice! Great recipe!
