Dal Palak

Have you eaten too many times outside and felt it is getting bored??? How about eating all rich and creamy dishes all the time and suddenly you do not feel like eating anything at all.... Wondered what is the best food when we are back from a trip or are sick or eaten too many rich meals.. It is the comfort food.. For me it is simple veg with lentil... I can be happy to relish this very simple and everyday food that can never get boring or heavy on you... And more importantly you have this feeling of accomplishment of giving healthy and nutritious meal to your own body and to your family... I try to spinach a few times in a month although I want to eat 2 times a week... This one is little more simpler than the one I normally do.. I got this recipe from here and it is very comforting, homey and out of the world tasty... So this is for D and regional food..And I am also sending this for Vegan Thursdays

Ingredients
Spinach - 4 cups (tightly packed)
Tuvaram Parupu / Toor Dal - 1/2 cup
Turmeric - 1/2 tea spoon
Salt - 1 1/4 tea spoons
Mustard Seeds - 1 tea spoon
Ulutham Parupu / Urad Dal - 2 tea spoon
Red Chili - 2
Cumin Seeds - 1/2 tea spoon
Asafetida - 1/8 tea spoon
Sugar - 1/2 tea spoon (optional)
Oil - 1/2 tea spoon + 1/2 tea spoon

MethodPressure cook the toor dal with 1 cup of water and turmeric until well done. Mash it to a paste and set aside
Remove the tough stems of the spinach and clean them very well to remove dirt and sand
Now chop the spinach roughly into small pieces
Heat 1/2 tea spoon oil in a pan and sauté the spinach until it is slightly wilted.. About a minute or two
Add the boiled and mashed dal, asafetida, salt and mix well
In another pan, heat 1/2 tea spoon oil and add mustard seeds, once it crackles, add cumin seeds, ulutham parupu and red chili
After the ulutham parupu turns golden, remove from oil and pour it over the cooked spinach..
Serve hot with white rice and enjoy!!!
