Honey Whole Wheat Pizza

Pizza is one of my daughter’s favorite… Actually I also like it, but the truth is I prefer home made. I have tried Pizza with regular all purpose flour, with multigrain flour (recipe coming soon), with whole wheat flour. In this recipe I have included 1/4th of all purpose flour also. You could try doing it completely with whole wheat flour, but you will need to proof for longer time.. I will try this next time with complete whole wheat flour. This will make 3 9 inch thin crust pizzas or 2 13 inch thin crust pizzas. Toppings are again a personal choice. I made 3 different group of toppings. One with Basil and mozzarella. Second with Basil, Olives and Mozzarella. Third with Cherry tomatoes, Mozzarella and Basil. Also please do not use Parchment paper on the baking tray, instead grease the baking tray well.

Ingredients
For the dough:
Whole Wheat Flour - 2 cups
All Purpose Flour / Bread Flour - 1/2 cup
Vital Wheat Gluten - 1 1/2 table spoons
Milk Powder - 3 table spoons (optional)
Instant Yeast - 1 3/4 tea spoons
Warm Water - 1 1/4 - 1 1/2 cups
Honey - 2 tea spoons
Salt - 1 3/4 tea spoons
Olive Oil - 2 table spoons
Italian Seasoning - 1 tea spoon
Garlic - 2 tea spoons (minced fine)
For the topping : - olive, cheese, basil, cherry tomatoes, garlic oil (or herbed oil)

Method
To the 1 1/4 cup warm water, add honey and yeast and mix well
Keep it covered until it is foamy (about 5 minutes)
Mix together whole wheat flour, all purpose flour, vital gluten and milk powder well
Make a well in the center and add the yeast mixture
Knead it well until there are no dry flour seen. You can add the 1/4 cup more water (a table spoon at a time)
Keep it covered for 10 minutes
Add salt, garlic and olive oil and the Italian seasoning
Knead it well for about 10 minutes until it is smooth and shiny
Make a smooth ball of the dough
Grease a bowl and place the dough coating all sides to ensure that a crust is not formed
At this point you can place the dough in the fridge and continue the next day or up to 2 days
If keeping in the fridge, bring it to room temperature before starting the next step
Allow the dough to become double in size
Knead it once and allow it to proof again for an hour or until doubled in size
Place the baking tray on the very bottom of the oven and Preheat the oven to 250 degrees C
Divide the dough into 2 pieces
Make 2 balls and place them on a greased tray at least 4 inches apart.
Covered with a greased plastic wrap
Allow it to double in size
By now the oven is heated for an hour with the baking tray in it.
Take a dough ball and stretch it to 12 inch size on a greased tray
Add the garlic oil and spread it evenly
Arrange the basil leaves and top it with cheese
Bake it in the preheated oven for 8 - 12 minutes until it is golden
Remove from the oven and enjoy hot!!!

    1. You get it in baking specialty shops. Ask for Wheat Gluten..

  5. The pizza looks just superb. I love pizza but unable to cook the same. I tried twice but it turned into a big disaster and henceforth i stopped preparing further. The recipe you have mentioned seems to be easy so m definitely gonna try this out and share the feedback with u.
