Bolani / Aloo Paratha

Bolani is Afghani Flat bread which is very similar to our stuffed paratha. Bolani is typically fried or baked. Today I have used potatoes and peas for the filling. Fillings can be any vegetable or combination of vegetables as per choice. I have tried both tawa version and baked version.. Loved the tawa version better. Serve this hot with curd or flavored mint chutney.

Ingredients

For the dough:

Whole Wheat Flour - 2 cups
Salt - A pinch
Oil - 1 table spoon

For the stuffing:

Potatoes - 3 - 4 (boiled, peeled and mashed)
Cumin Powder - 1/2 tea spoon
Green Coriander Leaves - 1/4 cup (chopped fine)
Lemon Juice - 1/2 tea spoon
Green Peas - 1/4 cup (boiled and mashed)
Onion - 1 (finely chopped)
Green Chili - 3 - 4 (finely chopped)
Oil - 2 table spoons
Salt - 3/4 tea spoon

Method

First prepare the dough by mixing flour, salt first. Once well mixed, add oil and mix until oil is well mixed
Add warm water slowly and knead to a smooth and pliable dough. Keep this covered for 15 minutes
Meanwhile prepare the filling
Heat oil in a pan and add the green chili and onion and salt. Saute until the onions are clear
Add the dry powders and mix for 15 seconds
Add the mashed potato and peas and mix well
Add the coriander leaves and lemon juice and remove from heat
Make the small number of portions as the dough
Take small ball from dough and roll it in medium circle
Place the filling in the center and cover from all sides and pinch the edges to seal it
Flip the stuffed ball and roll it to a thin paratha such that the seam side is down
You can use little flour for dusting
Place it on hot tava. When it gets little brown, apply oil or ghee.
Turn it and again apply oil or ghee on other side.
Keep turning simultaneously until it gets golden brown.
Delicious Bolani / Aloo Paratha is ready.
Serve it hot!!
