Paneer Pinwheels

Pinwheel is a leavened bread with stuffing which is rolled and then cut before baked. It is a great snack. It tastes best when served hot and can be accompanied with tomato Ketchup or a tangy and spicy chutney. The stuffing is really a personal choice and can be adjusted according to taste, preference and availability. It is pretty easy to do if the pastry sheets are available. I used ready made puff pastry sheets. This makes a great evening snack or perfect for parties.

Ingredients
Puff Pastry Sheets – ½ box– 1 box has 2 sheets and we will use 1
Bay Leaves - 1
Cloves - 4
Cardamom - 2
Cinnamon Sticks – 1 inch
Star Anise – 1/2
Fennel Seeds(Sombu)  – ½ tea spoon
Coriander Leaves – 2 table spoons

Asafetida - A pinch
Oil – 2 tea spoons
Turmeric Powder – ½ tea spoon
Salt – ¾ tea spoon
Garam Masala – ½ tea spoon
Coriander Powder – ½ tea spoon
Cumin Powder – ½ tea spoon
Amchur Powder – ½ tea spoon
Spinach – 1 ½ cups
Paneer (grated or crumbled) – ½ cup
Water – 2 table spoons

Method
Take the puff pastry sheet from the freezer and put in on a plate to thaw at room temperature. It will take 40 minutes to thaw.
Open the fold and make it as one sheet. Dust the surface with flour (whole wheat flour or all purpose flour) and roll it to seal the seems and make it to one big sheet
Cook the spinach in water in the microwave for 5 minutes and set aside
In a mixing bowl, add grated paneer, salt and all the spices and mix well
Heat the oil in a pan and add bay leaves, cloves, star anise, fennel seeds and sauté
Now add the paneer mixture and cook for a minute or two.
Remove from heat and allow it to cool
Add coriander leaves and the cooked spinach and mix well
Pre heat the oven to 400 degrees F
Once the masala is cool to touch, spread it on the rolled puff pastry leaving 1 inch in all the four sides.
Roll it tightly from the one side like a roll and towards the end of the roll, add little water and seal the edges by pinching it.
Cut ½ inch thick pieces with a very sharp knife making sure not to press the pinwheels hard to squish them.
Keep these flat on the greased parchment paper baking tray
Keep it in the oven for 12 - 17 minutes
Remove from the oven and transfer to a cooling tray
After 5 minutes, the paneer pin wheels are ready to be served!
