Pesto Di Noci is a Pesto made with Walnuts and Ricotta and is also called as Walnut Pesto Pasta. The pesto is rich and creamy from ricotta and is a quick, easy and great dish. The recipe can be made in less than 20 minutes from start to finish. Make sure to reserve at least 1 cup of the pasta cooking water as this dish can dry in a few minutes, so add some cooking water to the sauce and save 1 cup. Also serve this IMMEDIATELY – Even a few minutes will be late for this one. I made this with Multigrain Pasta.. This is my choice for W - International / Fusion
IngredientsWalnuts – 1 cup
Garlic – 4 cloves
Salt – ½ tea spoon + 1 ½ tea spoons
Ricotta – ¾ cup
Extra Virgin Olive Oil – 3 table spoons
Parsley (finely chopped) – 1 table spoon
Cheese (fresh grated) – 3 table spoons
Pasta of choice – preferably noodle like (Linguine, Spaghetti)
Water – to boil the pasta
Pepper Flakes – ¼ tea spoon
Italian Seasoning – ½ tea spoon
Black Pepper Powder – 1 tea spoon
MethodBring water to boil, add the 1 ½ tea spoon salt
Add the pasta to the boiling water and cook until done. Reserve at least 1 cup of the cooking water aside
Grind the walnuts to a small pieces (should not become a powder and there should be chunks of it)
Mix ricotta cheese, Italian seasoning, ½ tea spoon salt, chili flakes and half of the parsley well
Add the cooked pasta, olive oil, pepper powder and butter and mix well. Add the cooking water slowly if it is dry.
Top it off with grated cheese and the remaining parsley
Serve hot!!
