Mango Jam

Mango is the king of fruits is what I am teaching my daughter now... Generally we do not see Mango jam in stores many times.. I always imagined it was due to the cost of the mangoes.. We have a mango tree in our hometown and love to relish the mangoes.. But I am not a mango person.. I do not prefer anything made with Mangoes from Mango as is to Mango shake.. But the only exception is this delicious Jam.. Good thing about Mango jam, you get so much flavor and sweetness from the fruit that you can reduce the added sugar a lot..

IngredientsMangoes – 1 kg
Sugar – 1 cup (adjust accordingly)
Pectin – 1 table spoon
Citric acid – a pinch
Salt – A pinch
Method
Peel the skin and remove the seed and make mango pulp. Strain it through a sieve to make sure the pulp is smooth..
Heat pulp and sugar along with pectin and citric acid. Add salt and mix well
Once sugar dissolved, cook for another 10 – 15 minutes. Transfer to container and allow to set for 8 – 10 hours..

    1. Hi Kalyani, Pectin acts to get the perfect consistency.. It is more like an insurance... But generally you could try omitting it and cooking a little more longer until the consistency is reached!!
