Bread Pizza Cups–Muffin tin recipes

Bread is an universal food and there are lots of dishes using it.. Dishes can be a very simple bread jam or a delicious bread pudding.. Today we are going to be seeing the bread in cute cup form.. Now like yesterday's recipe, today's recipe is also a different use of muffin tin rather than the regular muffins or cupcakes.. These bread pizza cups are so versatile and are sure to impress kids and adults.. They are perfect for parties, potlucks, as an evening snack, a quick bite etc..I got the idea of making the bread pizza cups from rakskitchen. Filling is a personal choice. You can bake the bread cups separately and add sundal or sprouts as a change.. You could also fill them with fresh fruits and whipped cream.. yummm.. The taste is very similar to the Bread Pizza I make..  This Bread Pizza Cups should be served hot hot!!!

Ingredients

Bread - 12 slices
Capsicum - 1 cup (I used 3 colors)
Cheese - 1/2 cup
Olive Oil - 2 table spoons
Butter - for brushing the bread
Italian Seasoning - 1 tea spoon
Salt - 1 tea spoon
Onion - 1/2 cup (minced)
Green Chili - 2 (minced)
Garlic - 1 table spoon (grated)
Ginger - 1/2 tea spoon (grated)
Pasta Sauce - 1/4 cup

Method

Grease the muffin cups well
Remove the corners of the bread and cut a round with a cookie cutter
Brush one side with little melted butter
Place it in the greased muffin tin and press the edges
Preheat the oven to 190 degrees C and bake it for 6 - 7 minutes
Meanwhile prepare the stuffing

Heat olive oil in a pan and green chili, ginger, garlic and saute for 10 seconds
Add onion and salt and cook until the onions are well done
Add the pasta sauce and cook for 2 minutes until most of the moisture is well absorbed
Remove from heat and add the Italian Seasoning
In another pan add 1 tea spoon butter and saute the capsicum for 2 minutes
Remove from heat and add 1/2 the cheese

Once the bread cups are out of the oven, add the above mixture
Add the capsicum
Top it with cheese
Send it back to the oven for another 3 - 4 minutes until the cheese melts
Serve hot!!!
