Paavaikkai Podi (பாகற்க்காய் பொடி)

Paavaikkai Podi is a very tasty and quick podi to make which is very healthy. I have tried this so many times and all of them have been so good. This keeps very well for atleast 10 days.. May be more. I chose “Back to Hostel food” for this month’s marathon and this delicious podi will be perfect.

Ingredients
Pavarkaai / Bitter Gourd – 2
Yogurt – 1 table spoon
Red Chili – 2 or adjust to your taste
Cumin Seeds - ¾ tea spoon
Coriander Seeds – 1/4 tea spoon
Urad Dhal / Ulutham Parupu – 1 tea spoon
Channa Dhal / Kadalai Parupu - ½ tea spoon
Tamarind – very small lime size
Asafetida - ¼ tea spoon
Turmeric Powder – 1/2 tea spoon
Mustard Seeds – 1/2 tea spoon
Oil – 1 table spoon
Salt – 1 tea spoon

Method
Wash, dry and grate the bitter gourds. (While grating, remove the seeds).
Squeeze the bitter gourd well. Spread it on a paper towel and leave it as such for 10 minutes.
Now, mix it with a table spoon of yogurt. Keep aside for 30 minutes. Then, squeeze well and keep aside.
Meanwhile, dry roast urad dhal, channa dhal, cumin seeds, coriander seeds, tamarind and red chilly. Transfer to mixer jar and let it cool.
Grind to a fine powder. Keep aside.
In a pan, add oil and splutter mustard. Add asafetida and fry for a second.
Now, add the bitter gourd, turmeric powder and salt. Keep frying in low heat for about 15 minutes.
Add the ground powder and mix thoroughly. Keep it on a low flame for few minutes.
Cool and transfer to an air-tight container.
Serve over the hot rice with a dollop of ghee.
