Tomato Urugai is a pickle made from tomato. It is very spicy and tangy in taste. It can be served as an accompaniment to Dosa, Idli, Adai, Pesarettu, Arusi Adai etc and also be added to rice and served as tomato urugai rice. It is very beautiful from its rich and bright red color. This can be stored in the refrigerator for up to 10 days.
Ingredients
Tomato – 8
Turmeric powder – ½ tea spoon
Red Chili Powder – 2 tea spoons
Asafetida – ¼ tea spoon
Salt – 1 ½ tea spoons
Mustard Seeds – ½ tea spoon
Red Chili – 3
Oil – 3 table spoon
Method
Blend the tomatoes to a fine paste without adding water and keep it aside
Heat oil in a pan and add mustard seeds and once it crackles, add red chili and sauté for a minute
Add the tomato paste to the oil and stir continuously
After 30 seconds, add turmeric, chili powder, salt and asafetida
Cover with a lid and reduce the flame to medium low and cook for 5 to 7 minutes
Stir couple of times in between to ensure that nothing sticks to the bottom
Once the tomato starts to ooze out oil and become a thick gravy, remove from heat and it is ready to serve!!
