Caramel Sauce

I love the sauces that is served with the ice creams and the list is topped with caramel sauce. Did I know that it is so easy to make at home? No I did not as I did buy a readymade caramel sauce from the super market and licked it in the ice creams we ate at home.. Then I wanted to try this sauce at home and thought it would be so hard, but I was so wrong. This one is so simple and can be stored easily and used when needed. You need very few ingredients and I am not sure why I did not try this before. Enjoy your ice creams, shakes, cakes, pancakes and waffles with this delicious sauce.. Indulge!!

Ingredients

Sugar - 1 1/2 cups
Water - 1/3 cup
Heavy Cream - 1 1/4 Cups
Vanilla Extract - 1/2 tea spoon

Method

Mix sugar and water in a heavy bottom vessel with a handle and is deep enough
Heat this on medium heat until sugar dissolves and it bubbles lightly. Do not stir
Gently swirl. This is the reason you need to have the vessel with handle
Increase the heat to high and boil uncovered until the sugar becomes honey color. This measures about 350 F on candy thermometer(if using)
Gently swirl the pan again and be very careful as it will be quite hot..
Switch off the flame and from a little distance slowly add the cream
The cream will bubble like crazy and this is the reason you will need a deep vessel
Now the caramel will solidify
Switch the heat back on to low heat and simmer for 2 minutes until the caramel is fully dissolved
Allow it to cool completely which should take about 4 - 6 hours
The caramel will thicken a little and come to sauce consistency
The delicious finger licking caramel sauce is ready

  1. I've always had trouble making caramel sauce -- I either end up with burnt or with not-so properly made caramel sauce. Yours came out looking great.
