Dal Bhat w Rice

Today we are travelling to our neighboring country - Nepal to relish their National food - Dal Bhat with Rice.. When I was searching for the combos this was one of the first ones I had selected but could do it only yesterday!!! I made this for lunch and it was a very comforting and satisfying meal.. The best part is that you felt like eating home food but it is an International one!!! Serve this hot with steaming hot rice!!

Ingredients

Toor Dal / Tuvaram Parupu - 1 cup
Oil - 1 table spoon
Cumin Seeds - 1/2 tea spoon
Garlic - 1 table spoon (minced)
Onion - 2 medium (chopped)
Green Chili - 2 (slit cut)
Ginger - 1 tea spoon (grated)
Red Chili - 1
Red Chili Powder - 1/4 tea spoon (optional)
Lemon Juice - 1 tea spoon
Salt - 1 tea spoon
Turmeric Powder - 1/4 tea spoon + 1/2 tea spoon
Coriander Leaves - 2 table spoon (chopped)

Method

Wash the dal well and pressure cook it with 2 cups of water and 1/4 tea spoon turmeric powder
Cook for 3 whistles or until it is well done
Set aside
Heat oil in a pan and add the cumin seeds
Once the cumin seeds sizzle, add the green chili, garlic and ginger
Add onions and salt and cook until the onions are tender
Add the turmeric powder, red chili powder and cook for a minute
Add 1/2 cup water and bring it to a boil
Add the boiled and mashed dal and mix well
Bring it to a rolling boil and remove from heat
Add lemon juice and garnish with coriander leaves
Serve hot with rice!!

Rice

Ingredients

Basmati Rice – 1 cup

Water – 1 1/2 cups

Oil – A few drops

Salt – A generous pinch

Coriander Leaves – for garnish

Method

Wash the basmati rice well and soak it in enough water for 15 minutes

Drain the basmati rice and set aside

Boil 1 1/2 cups of water in a bowl

To the drained basmati rice, add the boiled water, oil and salt

Mix well

Microwave on high for 15 minutes

Once done, remove it and fluff it with a fork

Garnish with coriander leaves

Serve hot!!
