Kurkuri Bhindi / Bhindi Kurkure / Bhindi Kurkuri / Crispy Fried Okra

Today we travel to the state of Rajasthan with this delicious Bhindi recipe. This is a crispy fried okra (lady finger) that tastes best when served hot!! Serve this with chai!! I got this recipe from here and we loved it..

Ingredients

Lady Finger (Okra) - 200 grams
Besan / Kadalai Maavu / Gram Flour - 2 table spoons
Corn Flour - 2 table spoons
Salt - 1/2 tea spoon
Garam Masala - 1/2 tea spoon
Amchur Powder - 1/4 tea spoon
Red Chili Powder - 1/4 tea spoon
Turmeric Powder - 1/4 tea spoon
Chaat Masala - 1/2 tea spoon
Asafetida - 1/8 tea spoon

Method

Wash the okra well and remove all the water.. Press it with a kitchen towel to remove any moisture left
Remove the 2 ends for each of the okra
Cut it length wise into 4 thin pieces
Take the okra in a big bowl, add salt, garam masala, amchur powder, turmeric powder, red chili powder and asafetida and mix it well
This will now leave water and start to sweat
After 10 minutes of marination, add the gram flour and corn flour and mix well until they are well coated
Heat oil in a pan to medium heat
Slowly drop the okra into the oil and cook on high flame until they are crispy and golden
Take them out of the oil and place on a paper towel to remove any excess oil
Sprinkle chaat masala and the crispy lady finger is ready to be relished!!
Serve this hot for a snack along with chaai!!
