Maida Diamond Biscuits is a great snack. This can be enjoyed as is or can be added to Mixture. This is prepared during Diwali and is loved by all ages... This is my festival snack for this month's Vegan

Ingredients
All-Purpose Flour – 1 cup
Whole Wheat Flour – ½ cup
Salt – ¾ tea spoon
Asafetida – 1/8 tea spoon
Cumin Seeds – ½ tea spoon
Omam Powder / Carom seed powder – 1/8 tea spoon
Oil – 1/3 cup
Ghee – 4 tea spoons (for vegan use hot oil)
Water – ½ cup + 2 table spoons
Method Add the flours to a mixing bowl, add salt, asafetida, cumin seeds, omam powder and mix them all well.
Add ghee and crumble the flour and ghee with hands
Add water in 3 installments to make a tight dough. You may need water more or less water depending on the flour and the moisture level, so add water slowly until a tight dough is achieved. It took me ½ cup + 2 table spoons of water.
Allow the dough to rest for 1 hour on room temperature
Heat oil to fry
Split the dough into 3 portions
Roll the dough to less than 1/8th inch thickness
Use a pizza cutter or a cookie cutter or knife and cut into diamond shapes
Take each piece and fry them in oil until golden on both sides
Remove from oil to a paper towel to remove excess oil and serve at room temperature.
