When I made the Caramel sauce, I was so ready to make the mousse with it.. I searched online, but most of them had eggs and gelatin in it.. Nutella Truffles - Nutella Recipes

For this week BM we are going to be seeing desserts in different forms and the first one I have chosen is Truffles. Truffles - the word makes us drool.. Truffles are traditionally made with chocolate ganache and rolled in sugar or cocoa powder or nuts. I started with this recipe, but made some changes. Check out my regular Chocolate Truffles here. Today for a change I am using Nutella and also adding corn flakes and nuts.

Almond Truffles

Here is another easy recipe which takes resting time, but preparation time is so less and also so simple.. You need only 4 ingredients and this will be a great crowd pleaser.. You could use any nuts in place of almonds, but I love the combo of almonds and chocolate… Instead of adding the almonds to boiling water, you could also soak the almonds overnight and then peel them. There are so many versions of this on the net and this is my way..

Chocolate Dipped Strawberry

Some items are so easy, that you do not make note of the recipe, but you forget how easy they are and search for the recipe.. Same happened with me for the Chocolate Dipped Strawberry.. It was strawberry season and fresh strawberries were welcoming us into the grocery shops.. It would be almost a sin that you do not buy these beautiful fruit.. So tempted to buy these, I got a large quantity and made Jam (yes that is the first one I make when I have loads of fresh fruit) and now wanted to make something with the remaining fruits.. I remembered the chocolate dipped strawberry I made long ago and wanted to make it.. I remember it was so easy that it hardly took 10 minutes to make it.. But I did not have the recipe written, reason was - it was too simple.. Now I did it again, but this time, made sure that I am writing it on my blog for me to remember..
We can eat strawberry as is, but add chocolate and it looks even more inviting.. You could also make designs with this.. Sorry I was in a hurry and did not take the photos with the designs.. Next time.. So to the basic recipe now

Decadent Chocolate Fix / Healthy Chocolate Pudding

Lot of us have this opinion that a dish that looks healthy is not tasty and a dish that looks tasty is not healthy.. Whenever I serve a dish and oats is seen, people in my house assume that is not going to taste great and yes I have to mask the healthy ingredients quite a bit.. But with this delicious chocolaty pudding, all I had to do was keep it on the table and it was gone!!! Where did I get this recipe from??? I got this from a Doctor show.. They were talking about how difficult it is to eat healthy ingredients and how to make them tasty and quick. This delicious pudding has all the great ingredients (from their site – “With over 20 vitamins, minerals and antioxidants, avocado keeps you looking and feeling great, while pure cocoa gives your brain a rush of dopamine to fire up your brain’s pleasure receptors”and can be made in a jiffy..

White Chocolate Ganache

How many times I have admired the cake decorations in the bakery, pictures in magazines.. They look so appetizing and appealing that I would not want to cut the cake!! Such cakes are too beautiful to eat.. And the smooth icing made with chocolate is so smooth and shiny makes us drool.... Then I learnt this very simple frosting recipe and now this is what I recommend to everybody.. If you are not great at getting smooth icing, then this cake will be so ideal for you as the icing is very obedient and it listens a lot to you... This recipe will cover and frost one 9 inch round cake. I decorated my chocolate cake with this ganache frosting and we loved it.. It was picture perfect too…

Eggless Mini Eclairs / Eggless Choux Pastry

Eclairs - from the name of the recipe when I heard from Swathi for this month’s Baking partners challenge, I thought we were going to do an eclairs toffee.. silly me.. I did not know about this very delicate French pastry. Now that I learned it, let me tell you... it is very delicate, little too sweet for me and was actually not very hard to do.. I was very skeptical initially..

Eggless Donuts–Deep Fried

Many foods make us drool and only a few recipes are drool worthy while they are being made. Visiting donut factory where you can see the donuts  being shaped, proofed, coming in line to get deep fried and turn beautifully golden and then jump into the silky sugar syrup is a treat to watch. And the best part of you getting to choose from the fresh hot ones – awwww that is so out of the world.. Warm and delicious donuts in hand.. So how much tastier will it be when you can do this factory at home… The answer is – even more exciting and even more delicious.. For this month’s Eggless baking group, Gayathri  has chosen Donuts suggested by Jayanthi and here is a sinfully delicious delicacy This recipe will give around 12 donuts.

"Perfectly Chocolate" Eggless Chocolate Cake

I get excited to do cakes and cakes that call for very little fat. This is a delicious chocolate cake with no butter and no eggs.. Gayathri chose this delicious and very famous Hershey’s chocolate cake for this month’s Eggless Baking Group. It is a very easy cake to do. I halved the recipe and got a 9 inch round single layer cake. It is very interesting and new to me of adding boiling water to the cake batter and I searched the internet as to how that helps. Here are some of the answers I got – from webfoodpros“ Cocoa powder consists of a small amount of cocoa butter and the boiling water helps separate the cocoa butter out of the cocoa mass and emulsify it into the batter.Kingarthur’s website says  - “boiling water added to cocoa will help bloom the chocolate and impart more flavor“.  The cake was very moist and very delicate and I was so happy with the intense chocolate flavor. The next time I do this, I would do lesser sugar

Eggless Chocolate Cupcake

Cupcakes are small cakes made and these cakes are so soft and so moist and are full of chocolate flavor and taste. I got this recipe from a few websites and made changes according to our taste and preference. The rich and deep chocolate color comes from the Dutch Processed cocoa. If you used regular cocoa powder, the color could be much lighter. Cupcakes are everybody’s favorite and it is a recipe that surely is a kid’s delight. I am sending this to BM for Kid’s delight – Desserts.

Eggless Cauldron Cakes

Wish you all a very Happy and Prosperous New Year 2013
You learn so many new things daily... one such learning was this new type of cake. This is designed with the Harry Potter Theme... When Gayathri announced this cake for the Eggless Baking Group challenge, it looked very exciting and it was like food modeling. We were designing the chocolate cupcake to look like Cauldron ( a large metal pot) from the Harry Potter. When my daughter saw the cupcake, she shouted with excitement - handbag cupcake!!!! Yes she is too small to watch Harry Potter and to her it is Handbag cupcake and we all liked that name!!!!

Eggless Molten Lava Cake

My 100th post - yay!!!!.. I wanted to share a sweet or desert for my 100th post and so happy to share this yummy and delicious molten lava cake. What is a lava cake – well it looks like a normal cake, but when cut, chocolate lava flows from inside.. yummy!!! Chocolaty!!! I have tried this once before but the lava inside was very little gooey but not overflowing. I searched a lot on the web for an eggless version of this recipe and my first one was not as as lava oozing.. When Gayathri accepted my suggestion for this month’s Eggless Baking Group challenge, I was so happy and excited. I got this recipe from Master chef 2 made a few changes and the results were awesome!!! The chocolate lava was so drool worthy and yummy!! I got 2 4” inch cakes and a small 2 inch cake out of this batter. I made in a spring form pan.
