Today we are travelling to Italy by food for its very famous combo - Spaghetti and Meatless Meat Balls or Spaghetti and Veg Balls.. This marathon although was planned months ahead, I could not do much cooking or clicking as I had a baby recently and was on rest from house work and from cooking... Now that I am in to cooking, I am not yet doing it full fledged… This is one recipe which is a last minute preparation that was done just day before yesterday... As I write this post, I still have 2 more combos that I need to do for the next 2 days.. Yes it is a mess I know.. Hope I make it.. Coming to today's recipe, it was a big hit in our house and all of us enjoyed thoroughly... I made the very famous Spaghetti with Meatballs (without meat), So it is Spaghetti with veg balls and and served it with Garlic Bread… Here is the recipe to Garlic Bread
A collection of recipes that are tried in my kitchen.. All of them are vegetarian (eggless) and some are vegan recipes!!!

Veggie Fajita / Veg Fajita–Mexican Platter
Talk about simplicity and I cannot ignore this delicious recipe... When I was in US, the cuisine which has rice (other than Asian ones) is Mexican.. Love their beans and rice, cilantro rice etc.. Again this fajita is another dish that is part of their platter which is a elegant, simple and flavorful vegetables.. Be it burrito bowl or burrito or taco, veg fajita (pronounced as fa - hi - ta) is sure to be there.. Our favorite place was Chipotle where we used to relish burrito and taco and this fajita was so delicious and flavorful.. I surely miss them here in India (although I have so many other Indian options...). So I made them at home and we all relished it!! yummm...
So what is all in the platter? Tomato and Basil Tortillas, Cilantro Lime Rice, Veg Fajita, Sour Cream, Refried Beans, Corn Salsa and Cheddar Cheese

Parupu Usli
Parupu usli is a very popular dish which is made from dals and green beans. This is served in almost all marriages and functions. This is very rich in nutrients from parupu which is rich in proteins and green beans which is a green vegetable. This one is also very appealing to the eye with green, yellow and red colors. It is a great accompaniment to mor kuzhambu, rasam or sambar. It is very filling as it comes with a lot of protein. Since the grinded dal tastes similar to vadai, we also call this vadaikkari..

Milk Powder Burfi–Double Color Burfi–Diwali Sweets
My daughter loves the double color sweets on the sweet shelf.. And the ones that we normally do is with maida.. Today I am making a similar looking sweet with no maida or flour but with milk powder as the main ingredient.. This sweet will also be a treat for people looking for gluten free recipes..I got this recipe from here and made the changes according to our taste.. Make sure to adjust the sugar as per your taste… Artificial sweetener also works great for this recipe.. So if you are making this for people who use artificial sweetener, feel free to substitute.

Chocolate Dipped Strawberry
Some items are so easy, that you do not make note of the recipe, but you forget how easy they are and search for the recipe.. Same happened with me for the Chocolate Dipped Strawberry.. It was strawberry season and fresh strawberries were welcoming us into the grocery shops.. It would be almost a sin that you do not buy these beautiful fruit.. So tempted to buy these, I got a large quantity and made Jam (yes that is the first one I make when I have loads of fresh fruit) and now wanted to make something with the remaining fruits.. I remembered the chocolate dipped strawberry I made long ago and wanted to make it.. I remember it was so easy that it hardly took 10 minutes to make it.. But I did not have the recipe written, reason was - it was too simple.. Now I did it again, but this time, made sure that I am writing it on my blog for me to remember..
We can eat strawberry as is, but add chocolate and it looks even more inviting.. You could also make designs with this.. Sorry I was in a hurry and did not take the photos with the designs.. Next time.. So to the basic recipe now
