Milk Powder Burfi–Double Color Burfi–Diwali Sweets

My daughter loves the double color sweets on the sweet shelf.. And the ones that we normally do is with maida.. Today I am making a similar looking sweet with no maida or flour but with milk powder as the main ingredient.. This sweet will also be a treat for people looking for gluten free recipes..I got this recipe from here and made the changes according to our taste.. Make sure to adjust the sugar as per your taste… Artificial sweetener also works great for this recipe.. So if you are making this for people who use artificial sweetener, feel free to substitute.

Eggless Chocolate Chip Cookies–Eggless Cookies

Chocolate chip cookies are one of the most favorite and also popular variety of cookie. What is the difference between a biscuit and a cookie? You ask this question and you get different answers from different people. To me, cookie is more softer and chewier but a biscuit (that we get in India) is more harder and crispier. My daughter loves to read Dora stories and one of the stories have Dora's  mom making her Chocolate Chip Cookies and sending it with Dora when she goes to meet a friend. Now my daughter wanted me to make the chocolate chip cookie. So that was when I made my first try on these delicious, mouth melting and soft chewy cookies. I picked up this recipe and did make a few changes. My daughter was very happy with the cookies, so I have made this a few times now and it goes off in minutes before I could take as many pictures as I want!!!

Mullu Murukku–Indian Snacks/ Indian Savories - Diwali Recipes

Mullu thenkuzhal is a savory which is a famous South Indian snack. It tastes best when served warm or at room temperature. It goes well as an accompaniment with coffee or juice. This is a quick savory and can be done in less than 30 minutes. This can be stored in an airtight container for at least 2 weeks. This variation is used in occasions like marriages, festivals and celebrations.

Eggless Melon Pan / Eggless Japanese Melon Pan

Melon Pan is a bread that has no Melon and No pan either!!! It is a double layer bread with bread layer topped with a cookie layer.. Pan is the Japanese word for Bread which is borrowed from Portuguese and there are quite a range of Pans in Japan. This bread is the choice by Aparna for this month’s We Knead to Bake and the recipe is adapted from here and have made few changes. You can take a look at this video which has an excellent tutorial on the Melon Pan. The bread layer in this pan is very soft and is quite addictive and it is covered with a layer of crunchy cookie layer. The Melon added to the pan to give the name Melon pan could be from the crosshatch design on the bread.  This recipe will give 8 - 10 burger sized melon pans... Melon Pans are best enjoyed on the day it is made.

Eggless Fig Newtons

I was introduced to Fig Newtons while I was doing my grocery shopping. I saw this very inviting packet that looked so tempting and picked one. They were delicious and mouth melting and wanted to make it at home.. I had bookmarked a recipe long back, but got to try it now when it was announced for this month's Home Bakers Challenge. Sharanya suggested many delicious bakes and I chose this one as soon as I saw it.. No more postponing!! It was delicious and mouth melting..

Eggless Sugar Cookies / Old Fashioned Sugar Cookies

Some goodies are so sinfully delicious!!! Yes this is one of them!! So butter, so much sugar, but so irresistible!! Love this crunchy and delicious sugar cookies which are so easy to make and also looks so beautiful… It was my choice from the cookies that Priya gave us for this month’s HBC. The original recipe had eggs and I replaced it with Flax seed

Eggless Slovak Paska Bread

One of the great ways to beat the stress is Bread baking for me.. But I never got a chance to try this delicious Bread until now but I wanted to try it as soon as Gayathri announced it for this month's Eggless Baking Group. Slovak Paska is an Eastern European Bread during Easter and is loaded with butter and eggs. This is also a very decorative bread.. With this recipe I got one 9x5 loaf and one 5x3 loaf..

Eggless Pinwheel Cookies

I recently joined a new group – Home Bakers Challenge where we get 4 recipes every month to try our hands on and learn new techniques. One of the 4 recipes given for this month’s challenge is a Pinwheel cookie which looks so appealing and kids would just love it.. I have made cookies, but never tried this pinwheel design. The original recipe suggested by Viji was from here and I did make a few changes to ingredients and the method. This will yield approximately 40 – 45 cookies.

Eggless Jam Swirled Muffins / Eggless Nutella Swirled Muffins

Want a breakfast or food on the go in a jiffy? I am sure a lot of us say yes.. These muffins are so perfect for it. A delicious and very pretty looking muffins was suggested by Priya for this month's Eggless Baking Group which is started by Gayathri. It was a quick and easy one and you get a lot of points for those swirls. Wanted to get the picture with the muffin opened (like the interior), but it was gone by then!!! The original recipe had eggs and I replaced them with Egg replacer and little extra baking soda

Eggless Mini Eclairs / Eggless Choux Pastry

Eclairs - from the name of the recipe when I heard from Swathi for this month’s Baking partners challenge, I thought we were going to do an eclairs toffee.. silly me.. I did not know about this very delicate French pastry. Now that I learned it, let me tell you... it is very delicate, little too sweet for me and was actually not very hard to do.. Garlic Naan

What is your first choice of Indian Bread that you order in a restaurant? For me it is either Garlic naan or Onion Kulcha. That was until I laid my hands on Garlic Naan at home... It was so simple and so flavorful, now I rarely appreciate the ones in the restaurant.. Garlic Naan is a famous Indian bread that tastes best when served hot. It is accompanied with a variety of dishes like paneer Butter Masala, Channa Masala etc.

Eggless Butter Cookies - Mouth melting

Cookies are a great way to win a kid's heart!!! And I am sharing this for Kid's delight - Sweet Treats for this month's BM. I have tried many types cookies and this cookie is so appealing to the eye and it literally melts in your mouth. These are tiny and cute cookies which I bookmarked from here. We loved these and they are a super hit in my house... One big problem with these delicious cookies are once you try them and you cannot stop with one!!!

Eggless Vanilla Sponge cake–200th post

Today’s recipe will be my 200th post on the blog and am sharing a Vanilla Tutty frutti cake. Thanks to all my readers and followers who have helped me travel so far and hope to receive the same or better support from you all. Here is a delicious Fruit cake, sponge cake or vanilla cake for the celebration… Sponge cake is a very basic cake recipe that can be used just by itself as a cake or be converted to a variety of cakes like shape cakes, layered cakes etc. I used this in Tiramisu in the place of lady fingers or savoriadi cookies as they have egg in them. This recipe is from here with some changes. You will get 1 13x9 inch cake or 2 9 inch round cakes.

Coconut Cookies (தேங்காய் குக்கீஸ்)

Coconut cookie is an interesting, quick and easy cookie to make. It can also be called as biscuit. If you do not have fine grated coconut, then pulse the coconut in the mixie for 10 one second pulses. I got this recipe from here. Basic quantity is same quantity of sugar, coconut and butter and twice the quantity of flour.

Croissant

A very delicious French pastry which is very famous for its difficulty in doing. It is not common in household for people to bake croissants (even in Paris) is what I have heard unless they join some fun group like us "We Knead to Bake" which was started by Aparna. I was very intimidated by this croissants for a few years and now because of this group, I made it. I have previously watched Julia Child's show where she demonstrates Croissant. I have also seen it on Americas Test Kitchen and Croissants have been on my To-do for quite long now... Finally got to make it!!!!! Am so happy and so thrilled that I could make it at home and I can call it successfully!! A perfect croissant should be soft inside and very flaky outside and I got it!!!! yayyyyy!!!! I have some points to note and some tips that I learned along the way!!!!
