Lachha Paratha / Lachcha Paratha–Layered Crispy and Flaky Whole Wheat Paratha

Coming today is another variety of Indian Bread which is layered and is crispy and flaky. You can make this with all purpose flour also, today I made this with Whole Wheat Flour and loved the taste and texture. I served this with Mooli Masala. Make this for dinner and enjoy it with your favorite side dish..

Bolani / Aloo Paratha

Bolani is Afghani Flat bread which is very similar to our stuffed paratha. Bolani is typically fried or baked. Today I have used potatoes and peas for the filling. Fillings can be any vegetable or combination of vegetables as per choice. I have tried both tawa version and baked version.. Loved the tawa version better. Serve this hot with curd or flavored mint chutney.

Onion Kulcha

For the next 3 days, we are going to be seeing 3 different types of Breads for this month’s BM. Kulcha is a famous Indian bread that tastes best when served hot. It is accompanied with a variety of dishes like paneer butter masala, channa masala etc, though the most common side is the chole (or channa masala). Kulcha can be done in many ways and onion kulcha is a common variety of kulcha. This recipe will make 5 kulchas. Stuffing is a personal choice, you can also add cumin seeds, chili powder, salt and chat masala.

Naan / Butter Naan

Naan is a famous Indian bread that tastes best when served hot. It is accompanied with a variety of dishes like Paneer Butter Masala, Channa Masala etc. I have made them both in the oven and the tawa. You could also try with etandoor. Naan can be done in many ways and Butter Naan is a common variety of Naan. This is my choice for N for the Cooking with Alphabets theme in this month’s Marathon.

Makki Di Roti / Corn Tortillas - Punjab

Coming to the beautiful state of Punjab. Punjab’s name is derived from “Panch / Punj” means five and “ab” means water. A land of 5 rivers. From wiki – “Punjab is one of the most fertile regions on earth. The region is ideal for wheat-growing. Rice, sugar cane, fruits and vegetables are also grown. Indian Punjab is called the "Granary of India" or "India's bread-basket". It produces 10.26% of India's cotton, 19.5% of India's wheat, and 11% of India's rice. The Fazilka and Ferozpur Districts are the largest producers of wheat and rice in the state. In worldwide terms, Indian Punjab produces 2% of the world's cotton, 2% of its wheat and 1% of its rice. People in the area of Lahore and Amritsar prefer stuffed parathas and dairy products which is well known in the area for the quality of its milk products. There are certain dishes which are exclusive to Punjab, such as sarson da saag and makki di roti. The main masala in a Punjabi dish consists of onion, garlic and ginger. Tandoori food is a Punjabi specialty. The largest cultivated crop is wheat. Other important crops are rice, cotton, sugarcane, pearl millet, maize, barley and fruit. Broccoli Cheese Paratha or Calciumaratha

Women are advised to eat calcium rich foods. This advise is more when you are a new mom. So when I was advised about having calcium rich in my diet.. I took the advise from my folks at home and also turned to internet to see what ingredients are rich in calcium.. And then I put these ingredients together and made this paratha.. So I named it Calciumaratha.. The two main ingredients are Broccoli and Cheese.. Makes 12 medium big sized parathas. Good for 3 – 4 people.

Tomato and Basic Tortillas / Whole Wheat Tortillas

Tortillas are Mexican flat breads made generally with All purpose flour. This is a very healthy dish which tastes yummy. Generally they are made with all purpose flour, but I am making them with whole wheat flour... You can actually eat this as burritos or serve them with Mexican rice, guacamole, sour cream, cheese and veggie fajita!! It was delicious.. So tempting...

Garlic Naan

What is your first choice of Indian Bread that you order in a restaurant? For me it is either Garlic naan or Onion Kulcha. That was until I laid my hands on Garlic Naan at home... It was so simple and so flavorful, now I rarely appreciate the ones in the restaurant.. Garlic Naan is a famous Indian bread that tastes best when served hot. It is accompanied with a variety of dishes like paneer Butter Masala, Channa Masala etc.
