Channa Masala is a very popular North Indian dish served with rice or roti or naan but the most popular is the Channa Batura when this is served with batura – Maida puri. It tastes best when served hot. It is made with Garbanzo beans and is a very simple recipe. There are many recipes for this channa masala and this is the one of the ways I make. If using the canned garbanzo beans, then no soaking or pressure cooking the beans is required and this is a big time saver.
A collection of recipes that are tried in my kitchen.. All of them are vegetarian (eggless) and some are vegan recipes!!!

Pista Kulfi
Have you tried recipes without the utensils required? I have done that done like that many times.. One such example is this Pista Kulfi which I made long before I had owned a Kulfi mold. The recipe here also did not use the mold, but a bowl and then cut the kulfi into few pieces.. Pista Kulfi is an ice cream which can be made without the ice cream maker. Transfer them to small cups and insert wooden sticks into to get the kulfi look. Do not ignore the plastic paper part as it is critical to the recipe. This is a very simple dish which is lesser in fat compared to traditional ice creams. Obviously served frozen!!! This was one of the first ice creams I made.. Surely a delicious and simple one..

Mangai Saadam / Raw Mango Rice
Mango is the king of fruits and the raw variety called Raw Mango or Green Mango is used in a lot of cooking.. We used its powder as Amchur powder, we use the raw mango for pickles, rice, in sundal etc.. Mangai Rice is a very delicious and tangy South Indian variety rice. It is very appetizing in its appearance with its beautiful yellow color from turmeric. This is a quick recipe and taste best when served hot fresh, but also makes a great travel food. The best accompaniments for these variety rice dishes are Spicy potato fry, appalam, chips or vadam.

Mango Jam
Mango is the king of fruits is what I am teaching my daughter now... Generally we do not see Mango jam in stores many times.. I always imagined it was due to the cost of the mangoes.. We have a mango tree in our hometown and love to relish the mangoes.. But I am not a mango person.. I do not prefer anything made with Mangoes from Mango as is to Mango shake.. But the only exception is this delicious Jam.. Good thing about Mango jam, you get so much flavor and sweetness from the fruit that you can reduce the added sugar a lot..

Diabetic Friendly Recipes / Diabetes Friendly Recipes–World Diabetes Day
Diabetes is becoming a very common disease in the world today. Today is World Diabetes Day and there are many articles and advertisements and notes about Diabetes. From Wiki – “Diabetes mellitus, or simply diabetes, is a group of metabolic diseases in which a person has high blood sugar, either because the pancreas does not produce enough insulin, or because cells do not respond to the insulin that is produced.[2] This high blood sugar produces the classical symptoms of polyuria (frequent urination), polydipsia (increased thirst) and polyphagia (increased hunger).”. Here are some Diabetic Friendly recipes on my blog.. Click on the image for the recipe and details..
