Carrot Halwa is a very famous Indian desert made from carrots. It tastes best when served either warm or on room temperature. Generally Halwa has a lot of sugar and lot of ghee.. On the contrary, this one is quite less in sugar (you can reduce it even further) and very less in ghee.
Ingredients
Carrot (Grated) – 3 cups
Ghee – 2 tea spoon
Almonds –1 tea spoon (slices or small pieces)
Cashew – 5
Charoli - 5
Cardamom Powder – ½ tea spoon
Saffron – a pinch
Milk – 1 ¾ cup
Sugar – 1/3 cup
Nutmeg Powder – A pinch (grate the whole nutmeg a few times to a powder)
Method
Grate the carrots and keep aside. Lightly dry roast the almonds and keep aside
Roast cashew until golden and set aside
Heat ghee in a pan and add the grated carrots and sauté it till the smell of carrot goes away – about 7 minutes.
Add the milk and stir until it comes to halwa consistency and leave the sides – this will take 9 – 14 minutes. Add sugar and keep stirring for another 2 – 3 minutes.
Once the sugar is well blended to the above, add cardamom, saffron, edible camphor, nutmeg and remove from heat
Spread to a plate and add garnish with almonds, cashew and charoli.
Now the carrot halwa is ready to be served.

ReplyDeletecarrot halwa, served warm or cold is my fav of all times. I have tried making with low fat milk and less sugar and turned out pretty good! I allowed the carrot to cook with milk in low heat and omitted the ghee for healthier version!
