Pizza is one of the most famous food in the world. It is originally from Italy. Pan Pizza is a thick crust pizza which is very tender and soft on the inside and crispy fried on the bottom. This is a quick one and can be done in less than 90 minutes from start to finish. The toppings are a personal choice and based on availability. I got this from a cooking show and was fabulous.. Do not put too many toppings on one pizza, it will not taste good and no one flavor will be enhanced. Limit to 5 or 6 toppings maximum. Toppings can be onions, bell pepper, garlic, ginger, coriander leaves, sun dried tomatoes, mushrooms, pineapple, olives, capers etc. and cheese. Mozzarella is the best choice for this.
Ingredients
For the dough
All-Purpose Flour – 2 1/3 cup
Salt – ½ tea spoon
Instant Yeast – 1 package
Olive oil – 2 table spoons + 4 table spoons
Milk – 225 ml
Sugar – 2 tea spoons
For the topping
Garlic – 3 cloves
Oil – 1 table spoon
Coriander Leaves / Basil (chopped) – 1 table spoon
Olives – 10
Mozzarella Cheese – 1 cup
Onion (thinly sliced) – ½ cup
Crushed tomatoes – 1 can (28 oz.)
Method
Mix all the dry Ingredients in a mixer bowl and attach the bowl to the mixer with the dough hook on it
Mix the wet Ingredients (sugar is a wet ingredient in baking) together
Add the wet ingredient to the mixer bowl and run it on slow speed
Turn on the speed just a little and once it is well incorporated, increase the speed to medium or medium high and allow it to run for 5 minutes
Now it will be a very smooth tot ball like consistency
Grease a bowl with oil or PAM and keep it separate
Preheat the oven to 200 degrees or the lowest temperature possible and keep it on for 10 minutes and turn it off.
Sprinkle some flour on the work area and knead the dough a couple of times like letter folding and roll it and shape it to a round ball and transfer to the greased bowl for and ensure all the sides of the dough has oil on it to prevent from drying out.
Wrap a plastic over the bowl containing the dough to cover it and place it in the switched off oven. DO NOT COOK WITH PLASTIC COVER!!! SO SWITCH OFF THE OVEN BEFORE KEEPING THE BOWL INSIDE
Allow the dough to proof and rise for 30 minutes. Prepare the sauce and toppings in the meantime.
Heat a pan and add one table spoon of oil and garlic and cook for a minute
Now add the tomatoes and cook until they are well done
Season it with salt and pepper and remove from heat.
Take 2 nine inch cake pans and put 2 table spoons of olive oil in each pan and swirl it such that the olive oil is well spread to the bottom of the pan completely and keep aside
Bring the dough from the oven, lightly flour the work area and divide the dough into 2 equal parts
Remember not to over work the dough as it will become dense and not light and fluffy
Just roll this dough to 7 inch round and drape them on your knuckles and gently slant one hand and then the other and rotate the dough also simultaneously. This will make the dough stretch and form the round shape easily.
If the above step is difficult, then just roll the dough to 9 ½ inches. We are looking for a thinner center and thicker edges
Keep it in the pan and gently press the to the sides and ensure that the oil does not come inside.
Allow it to rest for another 30 minutes and again cover them with plastic. This time on the counter.
Put a pizza stone on the bottom rack .
Preheat the oven to 400 degrees
Do not put sun dried tomato as a topping on the top. If using sun dried tomato, then add it to the marinara sauce. Put 2/3 rd. cup of the sauce into each pizza and gently cover the top with it leaving ½ inch border. Add the cheese and add the desired toppings
Bake it for 15 - 20 minutes. It will depend on how thick is your pizza for it to cook.
Remove from the oven and allow it to cool for 1 minute and remove from the pan with the help of the flipper and serve!! You can add grated parmesan and red chili flakes if desired.
