Want something quick and yet very kid friendly??? Here is one… When Valli announced that “Cooking with corn” as one of the themes, this immediately came to my mind as I have been wanting to try this for ever.. Not sure why I postponed for such a long time… Anyways this is going to be regular from now on..
Ingredients
Sweet Corn Kernels - 1 cup
Onion (chopped) - 3/4 cup
Coriander Leaves - 3 table spoons (finely chopped)
Green Chili - 3 (finely chopped)
Mint Leaves - 1 table spoon (finely chopped)
Cucumber - 1 (cubed)
Lemon Juice - 1 tea spoon
Coriander Powder - 1/4 tea spoon
Cumin Powder - 1/4 tea spoon
Amchur Powder / Dry Mango Powder - 1/4 tea spoon
Black Salt - 1/8 tea spoon
Salt - 1/4 tea spoon
Red Chili Powder - 1/4 tea spoon
Garam Masala - 1/4 tea spoon
Method
I used frozen corn kernels, so i boiled it for 5 minutes with a pinch of salt
Drain excess water and set aside
Now the only thing to do is assembly.. Add all the rest of the ingredients and garnish with coriander leaves and serve immediately!!!
