I was introduced to Fig Newtons while I was doing my grocery shopping. I saw this very inviting packet that looked so tempting and picked one. They were delicious and mouth melting and wanted to make it at home.. I had bookmarked a recipe long back, but got to try it now when it was announced for this month's Home Bakers Challenge. Sharanya suggested many delicious bakes and I chose this one as soon as I saw it.. No more postponing!! It was delicious and mouth melting..
Ingredients
For the Dough
Butter - 1/2 cup (around 110 grams) - softened
Sugar - 1/2 cup
All Purpose Flour - 1 1/2 cups
Orange Zest - 1 table spoon
Vanilla Extract - A few drops
Egg Replacer - 1 1/2 tea spoons
Warm Water - 2 table spoons
Salt - A pinch
For the Filling

Method
Make the jam ahead and allow it to cool completely
Beat together sugar and butter until it is light and fluffy
Add egg replacer solution, orange zest and vanilla and mix well
Now add the flour and salt and mix until all the dry flour is hydrated
Place it in a plastic wrap and refrigerate for 4 hours or overnight
Make a pocket of 16x12 with parchment paper. This will make rolling the dough much easier.
Place the dough in the center of the pocket and roll it thin to 16x12 rectangle
Open the top parchment paper slowly and cut the dough into 4 pieces of 4x12
Now cut them horizontally to make all the pieces as 4x6. So now you will have 8 pieces of 4x6
Place the filling in the center of one 4x6 piece and slowly wrap it from both sides (as show in the pictures)
Place them on a baking tray lined with parchment paper
Preheat the oven to 180 degrees C
Bake it in the preheated oven for 12 - 15 minutes
Once removed from the oven cut each piece into 4 pieces of about 1.5 inches each.
Do the cutting immediately from the oven. Also use a very sharp knife
Allow it to cool on a cooling rack completely
Enjoy!!
