Do you know the speciality of Nellikkai (Amla)??? It is the only (at least that I know) that has 5 tastes out of the 6.. Meaning there is arusuvai (6 taste) types of taste that food can be seperated and Nellikkai has 5 in it.. The arusuvai (6 types of taste) are - Pulippu (sour), Thuvarpu (astringent), Kaarppu (pungent), Uppu (salt) , Inipu (sweet) and Kasappu (bitter).. And the other great thing about nellikkai (amla) is that it is used in so many varieties of dishes and it is sooo healthy.. The health benefits of it are so many that you can write few books on it.. And today's recipe if going to use this amla in a very easy way!!
Ingredients
Nellikkai / Amla (Grated or minced) - 1/4 cup
Cooked Rice - 2 cups
Ginger - 1 tea spoon (grated)
Green Chili - 2 (adjust to taste)
Coriander Leaves - 1 table spoon
Curry Leaves - 10
Sesame Oil - 2 table spoons
Cashew / Peanuts - 1 table spoon
Channa Dal / Kadalai Parupu - 1 table spoon
Urad Dal / Ulutham Parupu - 1 table spoon
Salt - 1 tea spoon (adjust to taste)
Red Chili - 2
Mustard Seeds - 1/2 tea spoon
Asafetida - 1/8 tea spoon
Turmeric - 1/4 tea spoon
Cumin Seeds - 1/2 tea spoon
Method
Prepare the rice such that the grains are separate. Allow it to cool.
Heat oil in a pan and add mustard seeds and when they crackle, add cashew / peanuts
When they are starting to lightly turn golden, add the kadalai parupu and ulutham parupu and saute until they are all golden
Add the red chili, asafetida and saute for 10 seconds
Add the curry leaves, ginger and green chili
After 30 seconds, add turmeric and salt and saute for a minute
Add the nellikkai and saute for 5 minutes or until it is soft.
Switch off the flame and mix it with the cooled rice
Serve!!
