Potato is an universally liked vegetable, also available in many parts of the world.. This version of using the potato in a kari is a common dish in our household which is everybody's favorite.. Using a cast iron pan will make the browning better and also even.. This can be served along with Sambar saadam, Rasam saadam, Curd Rice, Bisi bela bath, Mixed rice etc.. Today I am serving this with Kaara Kuzhambu and steaming hot rice..
Ingredients
Potato - 8 medium
Oil - 3 table spoons
Mustard Seeds - 1/2 tea spoon
Urad Dal / Ulutham Parupu - 1 tea spoon
Asafetida - A pinch
Red Chili Powder - 2 tea spoons
Salt - 1 tea spoon
Turmeric Powder - 1/4 tea spoon
Method
Pressure cook the potatoes for 2 whistles or until done but can holds its shape
Peel the skin and set aside
Cut into big pieces (about 6 or 8 a potato)
Heat oil in a pan and add mustard seeds
Once the mustard seeds crackle, add the urad dal
Saute until it turns little golden
Add the asafetida, red chili powder, turmeric powder
Immediately add the potatoes and salt and toss
Keep the flame on low and cook for 5 minutes
Gently toss the potatoes and cook again for another 5 minutes on low heat
Remove from heat and serve hot!!!
