Granola is a breakfast food and snack food consisting of various nuts, dried fruits, some sweetener and rolled oats. I have never heard of Granola in India or it is known by some other name. First time I heard of it was when my colleagues in the US used it for Lunch.. Looked like big bar and all that they would do is unwrap it and eat it with some milk or juice and call it done… Will look so cool.. And then I went to the shops to search for it and there were too many choices but hey they were also expensive.. I was watching my favorite Alton Brown show (and his Book) and saw him do this and could not delay doing it… I have tried this a few times and all of them were so delicious and so healthy
.
Ingredients
Old-fashioned rolled oats - 8 ounces, approximately 2 cups
Raw sunflower Seeds - 1 ½ ounces, approximately 1/2 cup
Sliced almonds -3 ounces, approximately 1 cup
Wheat germ - 1 1/2 ounces, approximately 1/2 cup
6 ounces honey, approximately 1/2 cup
Dark brown sugar - 1 ¾ ounces, approximately 1/4 cup packed
Unsalted butter - 1-ounce, plus extra for pan
Vanilla extract - 2 teaspoons
Salt - 1/2 teaspoon
Dried fruit (chopped) - 6 1/2 ounces - any combination of apricots, cherries or blueberries
Method
Grease a 9 by 9-inch glass baking dish and cover it with parchment paper and apply butter on top of the parchment paper and set aside. Preheat the oven to 350 degrees F (convection – 325 F)
Spread the oats, sunflower seeds, almonds, and wheat germ onto a half-sheet pan. Place in the oven and toast for 15 minutes, stirring occasionally.
In the meantime, combine the honey, brown sugar, butter, extract and salt in a medium saucepan and place over medium heat. Cook until the brown sugar has completely dissolved.
Once the oat mixture is done, remove it from the oven and reduce the heat to 300 degrees F.
Immediately add the oat mixture to the liquid mixture, add the dried fruit, and stir to combine. Turn mixture out into the prepared baking dish and press down, evenly distributing the mixture in the dish and place in the oven to bake for 25 minutes.
Remove from the oven and allow cooling completely. Cut into squares and store in an airtight container for up to a 2 weeks
points to note – Granola from Wikipedia - …, Granola is a breakfast food and snack food, popular in North America, consisting of rolled oats, nuts, honey, and sometimes rice that is usually baked until crispy. During the baking process the mixture is stirred to maintain a loose, breakfast cereal-type consistency. The names Granula and Granola were trademarked terms in the late nineteenth century United States for foods consisting of whole grain products crumbled and then baked until crispy;] in contrast with the contemporary invention, muesli, which is traditionally not baked or sweetened. Granola bars are usually identical to the normal form of granola in composition, but differ vastly in shape: Instead of a loose, breakfast cereal consistency, granola bars are pressed and baked into a bar shape, resulting in the production of a more convenient snack. The product is most popular in the United States and Canada, parts of southern Europe, Brazil, South Africa and Japan. Recently, Granola has begun to expand its market into India and other Southeast Asian countries.
