My blog views have crossed 100000... Yayy!!!! Thanks to all for your support and celebrating it with a delicious and healthy cake... Dates and Walnut Cake is a quick and healthier cake. The original recipe called for date palm jaggery. I used brown sugar and white sugar. If you can lay your hands on date palm jaggery, please use it. It is healthier option. I got this recipe from here and we loved it.
Ingredients
Wheat Flour – 1 cup
Dates – 10 - 12
Milk - ¾ cup
Date Palm Jaggery – 180 grams (Alternate 3/4 cup sugar)
Oil – 3 table spoons
Baking Soda – 1 tea spoon
Chopped Walnuts – ¼ cup (or Pecans)
Method
Mix walnuts with 2 tea spoons of flour and set aside.
Heat milk and add coarsely grated jaggery to it and stir. If using sugar, then add sugar to milk.
Add the dates(remove seeds if they are not pitted) to the milk and let it cook for 2-3 minutes. Let it cool a little and then grind it to a paste. There could be little chunks of dates and that is fine.
Add oil and mix.
Sieve together flour and baking soda and pour the date mixture to the flour and mix well. Add little more milk If the mixture is very thick.
Add chopped walnuts and mix well.
Preheat the oven to 180 degrees C and bake the cake in a greased loaf pan for 30-35 minutes or until a toothpick inserted comes out clean. It took 32 minutes in my oven. Make sure to turn the pan half way through to ensure even cooking
Points to Note: Bake the cake immediately after preparing the mixture so make sure the oven is pre-heated by the time mixture is ready.
Instead of grinding the dates with milk you can also chop and add them if you would like the prominent taste of the dates.

It is also commonly called "Notun Gur" ( literally, "new jaggery") or "Nolen Gur". It is not easily available, but can be found in some Indian grocery stores.
