For the theme of "Different types of Kootu", I could not miss adding one of my favorite kootu. This kootu is aromatic and super delicious. A very simple and flavorful kootu. This goes so delicious with hot rice, jeera rice, roti, phulka!!
Ingredients
Kathirikkai / Brinjal / Small Eggplant– 6 medium (cut into 1 inch cubes)
Turmeric Powder – 1 ½ tea spoons
Asafetida – 1/8 tea spoon
Kadalai Parupu / Channa dal – 2 table spoons
Coriander Seeds – 1 table spoon
Fenugreek Seeds – ½ tea spoon
Coconut – ¼ cup
Red Chili – 5 + 1
Curry Leaves – 6
Mustard Seeds – ½ tea spoon
Ulutham Parupu / Urad Dal– 1 tea spoon
Salt – 1 tea spoon + ½ tea spoon
Groundnut – 1cup
Tuvaram Parupu / Toor Dal – ½ cup
Oil – 2 table spoons
Tamarind Juice – 3 table spoons (about 1/4th of regular sambar)
MethodHeat oil in a pan and add a table spoon of oil and once hot, add kadalai parupu and once the parupu turns little golden, add the coriander seeds, fenugreek seeds and 5 red chilies. After 30 seconds, remove from heat and grind it to a paste along with coconut. Add water after grinding them to the powder. Keep this aside
Add 2 cups of water and cook the brinjal with ½ tea spoon turmeric powder and asafetida in microwave for 9 minutes
Pressure cook the groundnut with ½ tea spoon salt and 1 cup water. Cook for about 3 whistles.
Also pressure cook the tuvaram parupu with ½ tea spoon turmeric powder and 1 cup of water until well done.
Heat a pan and add a table spoon of oil, once hot add mustard seeds and once the mustard seeds crackle, add the ulutham parupu and sauté until golden. Add a red chili and curry leaves. After 10 seconds, add the tamarind pulp.
Add ½ tea spoon of turmeric and once it comes to a boil, add the boiled and mashed parupu, boiled groundnut and the grinded mixture and boil for 2 minutes
Remove from heat and serve hot!!!

Nice Kootu! It will be nice if you could put engish translation for the ingredients. I dont know what is kathrikai, parappu etc.. But I like your kootu & want to try it.:(
