Keerai masiyal or Keerai Kari is a kari that is very quick and easy to make. It is also very nutritious and healthy. Nothing makes life more easy than a quick and easy and healthy food.. Talk about healthy food and Spinach is always on the list and mostly on the top.. And there are so many ways of making this spinach into our food. This one is very simple and can be served as a side to meals. This is my choice for Vegan Thursdays
Ingredients
Keerai (chopped) / Spinach – 2 cups
Mustard Seeds – ½ tea spoon
Coconut – ¼ cup
Red Chili – 2
Oil – 1 tea spoon
Salt – 1 tea spoon
Asafetida – a pinch
Water – ¼ cup
Kadalai Parupu / Channa Dal – 1 table spoon
Ulutham Parupu / Urad Dal – 1 table spoon
Method
Cook the keerai, adding water and salt in microwave for 8 – 10 minutes (if there is more than 1 table spoon water, that needs to be strained)
Heat oil in a pan and add mustard seeds and once the Mustard seeds crackle, add the cumin seeds, red chili, kadalai parupu and sauté for 15 seconds and add ulutham parupu and sauté until the parupu change color to golden
Add asafetida and the keerai and cook on medium flame for around 2 to 3 minutes and mix well
Add coconut and mix well
Serve!!!
