Today's recipe is a muffin which is not too sweet and has an interesting taste from the corn meal and also a tang from the cranberries. Do you like fresh cranberries??? I am not a big fan of it.. But I love them dried.. But I love fresh cherries and prefer it over the macerated ones.. I always have a pack or two of various dry fruits in my pantry. The original recipe here calls for fresh ones but I have used the dried ones. I have also substituted the egg in the original recipe with flax seed meal. Go ahead and use the fresh ones if you like them and also can find them else can use the dried ones like me...
Ingredients
All purpose flour - 1 cup
Corn Meal - 1 cup (I used yellow cornmeal)
Sugar - 1/2 cup
Baking powder - 2 tea spoon
Baking soda - 1 tea spoon
Salt - 1/2 tea spoon
Oil - 1/4 cup
Flax seed meal - 1 table spoon
Warm Water - 3 table spoons
Vanilla - 1 tea spoon
Buttermilk - 1 cup
Dried Cranberries - 3/4 cup
Method
Preheat the oven to 375 degrees F
Prepare the muffin tray with liners or grease it well
Sieve together the flour, salt, baking powder, baking soda well
Add the corn meal and mix well
Beat together flax seed meal and warm water until gooey
In another bowl, beat together buttermilk, sugar and oil
Add the flax seed mixture to the wet ingredients and beat well
Add the vanilla essence
Now pour the wet ingredients to the dry ingredients and fold them gently.
Do not over mix or beat as it can make the muffins dry and rubbery.
Just fold until combined
Scoop the batter into the prepared muffin tray until almost full
Tap the tray a few times to release any air bubbles
Bake it in the preheated oven for 25 - 28 minutes or until a tooth pick inserted comes out clean
Cool it in the tray on a wire rack for 10 minutes
Remove from the tray and allow it to cool on the wire rack.
Serve warm or on room temperature

ReplyDeleteYou must try using fresh cranberries in muffins. They taste nothing like the dried. These muffins turned out great. They will make a great after school snack.
