Do you like sweet or savory? I love savory goodies over the sweet ones.. When I was in US and we visit coffee shops, you hardly get anything savory.. All the items in the menu will be sweet or over sweet.. Quick breads, muffins or donuts.. Not my choice.. I always love the puffs, samosas, sandwiches we get here.. And who can forget the delicious savory bakery biscuit we get here.. So tasty and delicious.. When I saw this recipe, I tried it and was very happy with the results..
Ingredients
All purpose flour - 2 cups
Butter - 1/3 cup (at room temperature)
Chili Flakes - 1/2 tea spoon
Curry Leaves - chopped very fine - 1 tea spoon
Cumin Seeds - 1 table spoon
Sugar - 4 tea spoons
Salt - 1 tea spoon
Green Chili - 6 chopped fine (adjust to taste)
Coriander leaves - 3 table spoons (chopped fine)
Curd - 2 - 3 table spoons
Method
Mix together flour, salt, chili flakes and cumin seeds well
In another bowl, cream together butter and sugar until fluffy
Add 2 table spoons of curd and beat well
Preheat the oven to 160degrees C. Line the baking tray with parchment paper.
Add the dry ingredients to the wet one and gently mix it
Add the green chili, coriander leaves and curry leaves
The dough should be crumbly and not wet
If required add a table spoon of curd more to achieve this consistency
Roll the dough into 1/4 inch thickness
You will not need any additional flour and it will also not be sticky
Now cut with your choice of cookie cutters
Place the cookies on the baking tray
Bake it in the preheated oven for around 20 minutes.
Cookies are done when the bottom of the cookies are golden.
Cool on a cooling rack until it comes to room temperature
Store in an airtight container and keep munching these addictive cookies..
