Aloo Bonda

Today’s recipe is a snack that is commonly served when relatives and friends visit us.. Talk about evening tiffin or snack, bajji and bonda always comes in the list.. Much before the baked goodies came in to our kitchen, it was the bajji, bonda and other snacks that were prepared for snacks..

Ingredients
Cashew - 2 table spoons
Chili powder - 1/2 tea spoon
Chopped Coriander - 2 table spoons
Chopped ginger - 1 tea spoon
Chopped green chili – 1 tea spoon
Cumin seeds – 1 tea spoon
Curry leaves - 1 table spoon
Mustard seeds - 1/4 tea spoon
Oil - 1 tea spoon + to fry
Onion – ½ cup(chopped fine)
Potato boiled and mashed – 4

For the batter
Kadalai Maavu / Besan / Gram flour – 1 cup

Baking Soda - 1/4 tea spoon

Salt - 1/2 tea spoon
Asafetida - 1/8 tea spoon
Chili powder - 1/2 tea spoon
Water - to make the batter
Ajwain - 1/4 tea spoon
Rice Flour - 1 cup

Method
First make the filling

Heat 1 tea spoon oil in a pan and add cumin seeds, mustard seeds and allow it to splutter..
Add Cashew and cook until slightly golden

Add ginger, green chili and onion
Add salt and cook until the onion is clear
Add curry leaves and all the dry spice powders
Cook on low heat
After 30 seconds, add the mashed potato and season well
Add coriander leaves and remove from heat
Allow it to cool to touch
Make balls out of the filling and have ready
Now prepare the batter

Sieve together besan, rice flour, baking soda, turmeric well
Add chili powder, asafetida, salt and ajwain
Add water and make the batter. The batter should be of flowing ribbon consistency..

Heat oil in a pan to fry the bonda
Once the oil is hot, dip the stuffing ball in the batter and slowly put them in the hot oil
Swirl the oil slowly to ensure even cooking and even coloring
Fry till golden amd remove from oil to a paper towel to remove excess oil (if any)
Serve hot as is or with your fav chutney
