Parupu Usli

Parupu usli is a very popular dish which is made from dals and green beans. This is served in almost all marriages and functions. This is very rich in nutrients from parupu which is rich in proteins and green beans which is a green vegetable. This one is also very appealing to the eye with green, yellow and red colors. It is a great accompaniment to mor kuzhambu, rasam or sambar. It is very filling as it comes with a lot of protein. Since the grinded dal tastes similar to vadai, we also call this vadaikkari..

Ingredients
Kadalai Parupu / Channa Dal – 1 cup
Tuvaram Parupu / Toor Dal – 1 table spoon
Beans – 4 cups (cut into 1/2 cm pieces)
Red Chili – 6
Salt – 1 1/2 tea spoons
Asafetida – A pinch
Oil – 4 - 5 table spoons
Cumin Seeds – ¼ tea spoon
Mustard Seeds – ¼ tea spoon
Curry Leaves – 10
Turmeric Powder – ¼ tea spoon

Method

Soak the kadalai parupu and Tuvaram parupu in water for 1 hour
Boil the beans with ½ tea spoon salt and turmeric powder
Drain excess water from the beans and keep aside
After the parupu is soaked for an hour, grind it along with red chili and cumin seeds with very little water
Heat oil in a pan, add mustard seeds
Once the mustard seeds crackle, add the grinded mixture
Sauté this well till it looses all the excess moisture. Keep mixing this to avoid burn at the bottom
Add salt, asafetida to the mixture.
Once well fried (takes around 7-8 minutes), add the beans
Mix this well and now the Vadaikkari / Parupu Usli is ready to be served!

  6. My MIL grinds the soaked dal and then pressure cooks it along with rice. I was planning to try that version soon. Yours is yet another way of preparing the same dish :-)
