As the name says this is a cookie made with oats and almonds. All the ingredients in this recipe are unprocessed and are guilt free. No white flour, no white sugar and not much fat, but this cookie is soooo tasty. I got this recipe from here. I chose this recipe for BM #25 under Baking with whole grain, the choice of grain today is Oats.
Almonds Powdered - 1/4 cup
Oats Powdered - 1 cup
Wheat Flour - 1/4 cup
Honey - 1/4 cup
Curd - 2 table spoons
Vanilla or Almond Essence - 1/2 tea spoon
Method
Slightly dry roast the almonds until a nice aroma comes and set aside to cool. Similarly dry roast the oats for a minute or so and set aside to cool. Once cooled to room temperature, grind them separately to powder
In a mixing bowl, add all the ingredients except curd and mix well
Now add curd (very slowly) and make it to a soft dough which should hold together. If 2 table spoons are not enough, then add a teaspoon at a time more
Cover the dough with plastic wrap and keep in the refrigerator for an hour
Line the cookie tray with parchment paper
Take small sized balls, make into smooth balls and flatten them a little with your pal and arrange it on the prepared cookie tray with at least 2 inches gap in between each cookie
With the help of a fork flatten the cookies even more to get the beautiful lines
Preheat the oven to 180 degrees C and bake them for 15 to 20 minutes. Mine took around 17 minutes
After 15 minutes, slightly the color would have changed to golden brown on the bottom and the sides. Do not over bake as they will become hard
Cookies will be soft when out of the oven and will harden as they cool down.
