Granola Bar

Granola Bar is a great, easy and quick snack which is also healthy… Too many good stuff in one.. This quantity would yield 10 to 12 bars. I chose this recipe for BM #25 under Baking with whole grain, the choice of grain today is Puffed Rice. I got this recipe from here.

Ingredients
Oats – 1 cup
Corn Flakes – ½ cup
Puffed Rice – ¼ cup
Chopped Almonds – 1 table spoon
Chopped Walnuts – 1 table spoon
Chopped Pistachio – 1 table spoon
Raisins – 1 table spoon
Pottu Kadalai / Roasted Channa Dal– 1 table spoon
Honey – ½ cup
Brown Sugar – ¼ cup
Melted Butter/ Vegetable Oil – 2 table spoons

Method
Toss oats, corn flakes, puffed rice, pottu kadalai, chopped pistachio, chopped almonds and walnuts on low flame for ten minutes till they become crisp.
Allow it to cool down for a while.
Take butter, honey and sugar in a sauce pan and mix it on a medium flame until the sugar melts completely and begins to bubble. Switch off the stove when the syrup turns slightly thick – about 3 to 4 minutes.
Immediately add the tossed oats and other ingredients and mix well until it is completely coated with the syrup.
Spray oil on a parchment paper and spread it evenly on a parchment paper and cover it with another sheet of parchment paper. Press down gently with a rolling pin to make a smooth top or use your hands with heat proof gloves. Once you have pressed it down enough to make half an inch thickness, remove the butter paper placed on top and allow it to cool for just a while. Once it comes to room temperature, cut them into bars. Do not wait too long to cut, then they might become very hard.
Granola bars are ready to eat and can be stored in an airtight container layered in between with butter paper or parchment paper.
