Vegan Mango Muffins w Hudson Oil

I try a lot of products to keep giving my family healthy and tasty foods.. Some products are well designed and make life so much easier. I got an email from Hudson to try out their Canola oil and was very happy to accept it. They sent me a liter of their oil in a very well packed case. I wanted to make a cake or a muffin and use this oil. When I first opened the main lid, I really liked the next spill proof lid that came along (see image below) and then when we pour the oil out, it is so much easier to not have to worry about spilling around the sides. Very efficient lid as regards to spill proof. I used this oil and made the Vegan Mango muffins and it was a very big hit among my family members. Delicious muffins and the house is filled with mango flavor and aroma. These muffins have very less fat and a lot of healthy stuff like whole wheat pastry flour, flax seed. However this does have quite a bit of sugar. You can reduce the sugar to 1/2 cup if desired. This sweetness was perfect for us. I got this recipe from here and I absolutely love it.

Ingredients
Whole Wheat Pastry Flour - 1 3/4 cups
Mango Pulp - 2 cups
Sugar - 3/4 cup
Vanilla - 1 tea spoon
Nutmeg (grated) - 1/2 - 3/4 tea spoon
Edible Camphor - A pinch (optional)
Cashew / Blanched Nuts - 1/2 cup (chopped)
Hudson Canola Oil - 6 table spoons
Warm Water - 6 table spoons
Flax seed powder - 2 table spoons
Baking Powder - 2 tea spoons
Baking Soda - 1/2 tea spoon

Method
Sieve together baking powder, baking soda and salt and add flour, nutmeg powder, edible camphor powder and mix well and set aside
In another bowl, beat together warm water and flax seed until it forms a gooey mixture. Add canola oil and beat until all the oil is absorbed
Add sugar, canned mango pulp and vanilla and mix well until all combined
Preheat the oven to 190 degrees C and grease a muffin tin well and set aside
Mix the dry and wet together and along half the way, add the cashew (or nuts) and mix just until dry ingredients are wet. Do not over mix as the muffins will turn rubbery
Scoop into the muffin tin and tap it on the counter for a few times for the air bubbles to escape
bake it in the preheated oven for 17 - 19 minutes or until a toothpick inserted in the center comes out clean. Mine took 17 minutes exact
Also it is a good idea to turn the baking tray to ensure even cooking

Allow it to cool on the pan itself for about 5 minutes
slowly run a butter knife along the edges and transfer to a cooling rack to allow it to cool completely
Serve as is. You can also garnish with powdered sugar and some cherries.

  5. Looks delicious, Sowmya. When eating food like muffins, cupcakes, etc, one should not care about the calorie content. Just have to indulge and enjoy them once in a while. It is these little moments of indulgence make life worth living as long as it is not over done.

Kindly do not be misled by these freebies-these tricky gifts you are receiving such as this Hudson Oil.This name Hudson itself should put off our traditionalists.And in addition we have to be wary of such 'free gifts'.We all know that there is nothing as a free lunch.This is a marketing trick that is called a marketing technique to get our gullible population 'hooked'.
    Our country is globalizing extremely rapidly at the risk of losing her own unique identity in every sphere of living.Not only this but even at the risk of our physical & mental health.
    According to the geographical placement of a country the seasons affect the flora & fauna and we have been bountifully blessed in numerous types of oil-seed producing plants.
    Foreign based companies (Wal-Mart & Starbucks Coffee ) are literally 'attacking' our nation with their 'dubious' products such as cooking oils & other packaged edibles.
    Olives cannot be cultivated in any part of our country but our people are 'mad' about this 'healthy oil'.This tree grows only in a Mediterranean climate & it was alien to our cooking culture.If you recall,a few years ago every 2nd beauty queen was of Indian origin.Did anyone ever wonder why?It was to promote foreign cosmetics into our country.And now of course every street even in remote villages we have beauty parlors where women 'must go to get the beautiful look'!
    Kindly think well before using & promoting such oils because verily they may cause health problems.We have to think well & remember the very apt proverb-One man's meat is another man's poison.
    We must live in harmony with our nature -Prakriti-& that encompasses the environment & all the facets of life that we are used to!

    1. Just for FYI - Olives are actually quite widely grown in Assam and are very easily available. They are called 'Jalpai' and are made into pickles. I grew up eating Jalpai achar. Olives are not the preferred oil for cooking in the East as it's mild, hence never explored. Mustard is the one that is preferred. Olives are fast becoming the new rich crop in India due to it's massive demand worldwide. Olive Oil is truly healthy, and if you cook it in, there is absolutely no change in taste, in fact it enhances the taste in some cases - and this from a very mustard oil loving girl.There have been many imports from foreign lands to India that has become so Indian that we don't even realize that they were foreign to start with. Potatoes are the biggest example. Not everything videsi is bad. Tomatoes, cashews...tea! The list goes on and on.Just my two cents :)
