Love breads and bread baking... very self satisfying and soothing.. This is one of best breads I have baked and I got this recipe from here and it was yummy!! Great texture and spongy and very soft. My choice for R - Baked
Ingredients
Bread Flour - 2 2/3 cups
Salt - 1/2 tea spoon
Sugar - 1/4 cup
Honey - 2 table spoons
Warm Water - 5 table spoons
Ricotta Cheese - 3/4 cup (low fat)
Butter - 2 table spoon plus for brushing the loaf after baking
Instant Yeast / Rapid Rise Yeast - 1 packet (2 1/4 tea spoon)
Method
In a mixing bowl, whisk together warm water, yeast and sugar. Keep it covered for 10 minutes or until it becomes frothy
Add ricotta cheese, honey, 2 table spoons butter and mix well
Add flour and make it to a smooth ball..
Knead it well.
Grease a pan and coat the ball with oil and let it sit in a warm place for 15 minutes
Add salt and knead it again for 3 minutes
Now keep it in the greased bowl back for about an hour or until it doubles in volume
Punch down the dough and knead it again
Grease a 9x5 pan and set aside
Shape the dough into a loaf shape like how you fold a business letter
Place it inside the loaf pan and loosely cover it with aluminum foil and allow it to rise for 30 minutes
At the end of the rising cycle, preheat the oven to 190 degrees C and bake for 20 minutes
Decrease the temperature to 160 degrees and continue to bake for another 15 minutes or until it becomes dark golden brown and a hollow sound comes when tapped
Brush the top with melted butter and allow it to cool on a cooling rack
Slice it when it is completely cool
